Cinnamon Baked Doughnuts


This morning I made Cinnamon Baked Doughnuts. This is a Food Network recipe by Ina Garten.

I was reminded why I don't made baked doughnuts often. The doughnuts stick to my pan, even after I greased them. I even tried to grease and flour the pans like you do for cakes.

This recipe does make a lot. There is only three people that live in our house. They might not get eaten before these go stale.

These doughnuts are delicious, but coat the doughnuts in butter, cinnamon, and sugar. It makes all the difference.

Salted Caramel Chip Chocolate Cookies


These delicious cookie recipe is found on the back of the #hershey Sea Salt Caramel Chips bag.

I love this cookie, I am a sucker for salted caramel. This recipe is found on Hershey's web site and can be found here.

Ingredients
  • 1/2 cup (1 stick) butter or margarine , softened
  • 3/4 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1-1/2 cups all-purpose flour
  • 1/2 cup HERSHEY'S Cocoa
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1-2/3 cups (10-oz, pkg.) HERSHEY'S Sea Salt Caramel Flavored Baking Chips

Directions

  • 1. Heat oven to 350°F. Line cookie sheet with parchment paper or lightly grease.
  • 2. Beat butter, brown sugar, granulated sugar and vanilla in large bowl until well blended. Add eggs; beat well. Stir together flour, cocoa, baking soda and salt; gradually blend into butter mixture, blending well. Stir in caramel chips. Drop by rounded teaspoons onto prepared cookie sheet.
  • 3. Bake 7 to 9 minutes or until cookie is set. Do not over bake. Cool slightly; remove from cookie sheet to wire rack. Cool completely. Makes about 4 dozen cookies.
I really do like the chocolate cookie base and may use this base for other for other chips.

Pumpkin Everything

It is that time of year were pumpkin flavors are emerging. A trip at Trader Joe's reviled a variety of pumpkin flavored products. We saw pumpkin flavored beer, tortilla chips, pumpkin butter, cereal bars, toaster pastries, and I am sure there are more products. We bought the cereal bars and the toaster pastries.

I had the pastries for breakfast, it was ok. I think I would rather stick with pumpkin pie with lots of whipped cream.

Macaroni With Tomato Cheese Sauce


This recipe had come out of a vintage cook book that had once belonged to my mother-in-law
The recipe is found on page 255

This recipe caught my when I was browsing through the book.  This recipe contains:
8 ounces of cooked macaroni
1 can of condensed tomato soup
1/2 milk
1/2 t celery seed
1/2 t salt
2 cups shredded cheddar cheese
2 T buttered bread crumbs. (I added 2 T of bread crumbs to 2 T of melted butter)

Heat the soup, milk, seasonings, and 1 1/2 cups of cheese over low heat until the cheese is melted. add it to the cooked noodles. Put the noodle mixture into a greased 2 quart casserole dish. Top with the remaining cheese and the buttered bread crumbs. Bake in 375 degree oven for about 20 minutes.

So I had about 1 pound of Velveeta, I used that and a 1/2 cup of shredded cheese in my sauce. It is really good and I will likely make this again.

What I found odd about this book is that there are laundry tips at the back of the book.

Cucumber Lemonade

Where I work there is a garden on site. I personally don't have a garden spot, but occasionally someone leaves out fresh produce for others to have. Today I took home a cucumber and made cucumber lemonade.

What I did was made it low/no calorie by substituting Sweet N Low for the 1/2 sugar (12 packets). I also didn't have any fresh lemons, but I did have lemon juice. So I added 2 tablespoons of lemon juice.
I does take some effort to make this up, but it turned out great.

Wedding

Today is my daughter's wedding. It is going to be a simple wedding at the park. She is making her own cake. Since it is outside, she researched for a frosting that would hold up to high temperature, in case it was going to be a hot day. She found that fondant was an option. She made a marshmallow fondant.

She is going to have chocolate, lemon, and white cake.

So I had to try to make roses with some of the leftover fondant.
I found a You Tube video and made my first attempt at a fondant rose.

It turned out ok. There won't be any roses on the cake, it will just have hearts.

Chilli and Burritos


My son was in the mood to make some chilli and burritos.  The burritos have refried beans, instant taco rice, ground beef with corn and taco seasoning , and topped off with cheese and sour cream. I make frozen burritos with the leftover ingredients.


The chili is more of a chili mac.  It is partially based off a vintage recipe I found in my mother-in-law's recipe box. The noodles have eggs and milk mixed in with the chili on top. I don't think I will do this again as it like having scrambled eggs in with the noodles. It was still delicious

Homemade Seafood Alfredo

When I made homemade noodles, it deserved homemade sauce.

I found a recipe online that had cream cheese and grated Parmesan cheese. I also added seafood, carrots, onions, and a chopped tomato.

The problem is that I forgot to get fresh Parmesan cheese and ended up using the stuff from the bottle. Still turned out OK. Fresh Parmesan cheese might of made it better.

Tasty Eats

I have been busy this weekend making some desserts.

My son wanted red velvet cookies, so I made him some. It is the cake mix cream cheese cookie recipe using red velvet cake mix.

So I had egg whites left over, so I made meringue cookies.

Of course, very ripe bananas around the house means banana bread.

Pie Crust Cinnamon Rolls

After seeing this on Facebook, I had to try making the cinnamon rolls using pie crust dough. I made my dough from scratch, but you could get the pre-made one from the store.

Roll out the pie dough, add about one tablespoon of melted butter on top, sprinkle with cinnamon and sugar mixture, roll up the dough and slice into rolls. Bake at about 400 degrees Fahrenheit for about 10 minutes of until golden brown.

We got an ice cream attachment for our Kitchen Aid mixer, so we have making ice cream. This one is chocolate pudding ice cream.

My son treated me to lunch, this is the veggie sandwich from 5 Guys. It delicious and messy.

Taco Ring

Creamy Cheesy Burrito Bake



I finally got around to make a recipe that I pinned on Pinterest. This is a creamy cheesy burrito bake. It was really delicious. You can find it here.

Greek Meatloaf Recipe

So my husband delivered on his promise to give me the recipe for his meatloaf. He also included a recipe for the greek potatoes and tzatziki sauce.



Greek Meatloaf
1 lb. ground Lamb
1 lb. ground pork
2 onions (caramelized)
2 eggs
1 tsp. Salt
1 tsp. pepper
1 1/2 cup Panko Bread crumbs
4 oz. raw spinach leaves
6 oz. Crumbled Feta cheese
Salt and Pepper

In a mixing bowl, add lamb, pork, eggs, salt and pepper, and bread crumbs. Mix thoroughly. place a large piece of Plastic wrap on counter and press mixture into a 1 inch think square. Spread caramelized onions on top of pressed out meat, then add your spinach evenly, and then your Feta cheese. Using the plastic wrap lift one side up and start rolling the loaf into a log. Place on greased baking sheet, salt and pepper outside of loaf,  and bake 30 minutes covered at 375 degrees, then remove foil and bake additional 20 minutes. remove from oven and let rest 10 minutes. Slice and serve hot with Tzatziki sauce. 

Homemade Tzatziki Sauce
16 oz. Greek yogurt
juice of 1 lemon
1 cucumber (finely chopped)
1 glove Garlic (finely chopped)
3 Mint leaves (finely chopped)

Put all ingredients in a food processor and blend well.

Greek Potatoes
5 Russet potatoes peeled and Quartered lengthwise
salt and pepper
2 cups Chicken stock
3 Tablespoons oregano
2 Bay leaves
3 lemons

Cut potatoes and place in a casserole dish, sprinkle with salt and pepper. in mixing bowl add chicken stock. oregano and juice from 2 lemons. mix and pour over potatoes. place mint and Bay leave into dish. Cut the remaining lemon into 4 sections and place on top of potatoes. Cook 375 degrees for 30 minutes then remove foil and bake additional 25 minutes.

Cinnamon Roll French Toast Bake

On Jan 2, I posted a video from Cooking Met Daan on my Facebook page. I finally got around to making it myself. It was a huge success.

According to the video it takes:
2 tubes of cinnamon rolls, save the frosting
6 eggs
1/2 milk
2 t cinnamon
2 t vanilla
1 cup maple syrup

Coat 9 x 13-inch pan with melted butter. Cut up the rolls into bite size pieces. Add to pan. Mix eggs, milk, cinnamon, and vanilla. Add to pan with the cut up rolls.  Drizzle over the maple syrup. Bake at 375 degrees for about 25 minutes. Frost with the frosting from the cinnamon rolls.

It turned out crispy on top and moist, like french toast, on the bottom. I would make this again. I might add bacon next time.
