Veggie Stuffed Peppers


These veggie stuffed peppers are based on a stuffed artichoke recipe found in a vegetarian cookbook I forgot I had. We had moved recently and I had a tote of cook books tucked away in our old place. 


To make this I used:
4 green peppers
1 chopped onion
1 clove garlic
1 small pack of chopped mushrooms (recipe calls for 1/2 cup, I used way more)
1 medium grated carrot
3 tablespoons of diced sun dried tomatoes
leaves from a spring of thyme
4 tablespoons of water
salt and pepper to taste
2 cups of bread crumbs

Cut off the tops of the green peppers and put on a baking sheet or small pan
For the filling, sauté the chopped onion and garlic for a few minutes. Add the mushrooms, carrot, tomatoes thyme and water. Cook for another 5 minutes, then add the bread crumbs.

Spoon the filling into the peppers (I had some filling left over, probably because I used more mushrooms than the recipe called for). Drizzle some olive oil on top. I also added some fried onions on top.

Cook for 350 degrees for 25- 30 minutes. 

I was initially concerned that the filling was going to be too dry, but it wasn't. I liked it.

Because we are not vegetarians, I had served this will some sausage sliced and fried in a pan.

Tasty Eats

I thought it was time to share some of the tasty eats over the past few weeks.


I was gifted with more zucchini, I had made this oatmeal chocolate chip cookie from this recipe:



My husband made this ice cream cake. It was simply ice cream in the center of chocolate cake and covered in salted caramel icing.


I made a five cheese cheese pasta after I heard it mentioned in a radio show I listen to. Not only does 5 different cheeses, it had caramelized onions (I had caramelized onion cheese), bacon and fried onions on top.
 I had some sauce left over from the zucchini noodle dish, so it created this chicken parmesan ring.



I had shrimp that had to be used up and I was in the mood for curry. I used the curry sauce recipe I had found in my grandmother's cook book. I added some jarred roasted red peppers. Overall it was good curry. 


My son had made this chili. I did not press for a recipe, but when he makes chili, he adds tomato juice as the tomato base.

Zucchini Noodles

I always appreciate when other people have gardens and share their fruits of their labor. Someone at work left out some zucchini. At first I thought it was a cucumber before I realized it was a zucchini. I did want to make noodles with it, but I don't own a tool to easily make it into noodles. I had to do it by hand with a potato peeler.

I only did half of the zucchini into noodles. I had a little bit left of some rotini noodles, so I cooked off the noodles and added some chopped onion and spaghetti sauce. It was a tasty meal for my son and myself.

For the other half of the zucchini, I made zucchini bread using this recipe. I did add a banana to make it zucchini banana bread.

Ice

So I am doing a quick blog post about ice. We had recently moved to a new home. We had ice cube trays with the refrigerator in our old place. There were no ice cube trays in our new place. My husband and son uses ice all the time, weather it be ice water or ice in their drinks. First we went to target to look for ice cube trays. We could not find the standard size ice cube trays, but found these cute silicone trays.
We bought 6 of these.

I also had this snowflake mold for years, I have tried to make bake goods in this mold with no luck is seeing the snowflake design.

Worked out pretty well with ice.






  I am made some black and white photos for The Weekend in Black and White.  Ice can make some really cool photos.

I think my son and husband go sick of filling and emptying the ice cube trays, so my husband had bought an ice machine of Amazon.

Banana Pancakes


 There are many versions of banana pancakes out there on the internet. The ones I have have seen have oatmeal in them. For my version, I adapted a favorite pancake recipe to include a banana.


Banana Pancakes

1 egg

1 banana

1 cup flour

3/4 cup milk

1 tablespoon sugar

1 tablespoon baking powder

1/2 teaspoon salt.

Put all ingredients in a blender and blend until smooth.  Pour about 1/4 cup of the batter onto a hot greased griddle. cook until the pancake is puffed up and dry around the edges. Turn and cook until it is golden brown.
