Fudgy Mint Cookies

 Sundays around our house mean bringing our grandkids to church with us to attend Sunday School. After Church we usually go somewhere to eat and then come an a spend a couple of hours back at our house. An activity we almost always do is make cookies. This past Sunday I made the Fudgy Mint Cookie recipe found in the 2007 Taste of Home cook book.

 It is a chocolate cookie made with a box of devils food cake mix. A round ball of dough is coated in powdered sugar, baked, and after the cookie is set you immediately place a round mint cookie in the center. As you can see I did not buy the round mint cookie. I had bought large square mint cookies. I had to break apart the mint cookies into smaller pieces This recipe could of probably worded with any other cookie or candy. I was considering making this with thin Oreos.

Toffee Squares

If you have seen my post from Christmas, I had mentioned that I got a couple of Pioneer Woman cookbooks for Christmas. I had also mention I recognized a recipe I have done in the past. Toffee Squares is a recipe found in the 1963 Betty Crocker Cookie book. The Pioneer has a similar recipe she called Spreads. I had done the Spreads recipe to see how it compared. It thought it was just as good. In the past I would top it with nuts, it was suggested in the book to top with pretzels. It was good choice. Toffee squares for me is a favorite cookie around the Christmas holidays. It still is a great cookie.

Apple Butter Oatmeal Bites

I did not intend to make the apple butter version of these oatmeal bite.


I wanted to make the peanut butter oatmeal version I always make. There was just one problem, I was almost out of peanut butter. So I had to figure out a substitute. I had some apple butter left over from the Dreamy Apple Butter Pumpkin pie recipe (so good), so I tried it out as a substitute. I did also add a tablespoon of peanut butter. I also added more oatmeal because I thought the batter was still too loose to form into balls. the recipe worked out to be:

about 1/2 cup oatmeal
1/4 cup ground flax seed
1/4 cup mini chocolate chips
1/4 cup apple butter
1 Tsp peanut butter.

I did not add any honey because I thought the apple butter would be sweet enough. It tasted alright, I was not use to the texture. Overall it worked out in a pinch. Next time I make the peanut butter version I might substitute the apple butter for the honey. I like the flavor of apple butter...and I need to used up the apple butter.

Lemon Garlic Kale Salad

The premise for their channel is that this couple has lost a combined total of about 300 pounds by going on a whole food plant based diet. I think it interesting that they have chosen this lifestyle and that they seem to be happy with it so far. I am not all in on a completely plant based diet, but I do need to get more veggies in my diet.

….and because I am not vegan, I added cheese and ham. When I presented this dish to my husband, he did not want any part of it. I guess he does not like kale.
