A Couple of Cookie Recipes

Here is another cookie creation to share. It is a double chocolate chip cookie with a peanut butter cup surprise. My husband brought home candy on sale (at Wal-Mart?) and got me a package of Reese's Peanut Butter Cups. So what I did was follow the Nestle Toll House Cookie recipe, added 1/3 cup of cocoa, put a ball of the finished dough on the cookie sheet, added a quarter of the peanut butter cup in the center, and added more dough on top to cover the candy. Bake at 350 degrees for 8-10 minutes. Yum! this turned out really well!
Next I have another version of the Healthy Cookie recipe. I was out of half of the ingredients I originally used so here is another version. It is a Peanut Butter Graham flourless cookie. My are always skeptical whenever I "Just Wing" a new recipe, but it turned out to be a good cookie. Here is the recipe.
Ingredients:
2 Cups Oatmeal
1 Cup Brown Sugar
1/4 Cup Peanut Butter
1/4 Cup Graham Cracker Crumbs
1/2 Cup Wheat Germ
1/2 Cup Peanuts
1/2 Cup Butter
1/2 Cup Shortening
Cream butter,shortening, and brown sugar. Add remaining ingredients. Drop by round teaspoonfuls, press down slightly. Bake 8-10 minutes at 350 degrees.

Just Wing It Meatloaf Recipe

I had to reformat my computer for the millionth time. We are well overdue for new computer. Unfortunately that means I did not back up picture I was going to use for the meatloaf and now have no picture.
Edit Oct 7, 2012: Finally a photo for the meatloaf. I did not make the gravy. When I made this, it was really heavy in oregano. So maybe next time I will cut back on the Italian seasoning.
Do my husband made meatloaf a few night ago and here is his recipe:
Ingredients:
2lbs of ground beef
1/2 cup diced onion
1/4 cup honey mustard
1/4 cup Italian Seasoning
1 egg
1/8 cup Worcestershire Sauce
1 cup panko breading
1/2 Ketchup
Directions:
Mix all ingredients except the ketchup. We formed it into a loaf and put into a 9 x 13 pan. you could put this in a standard meatloaf pan. Top meatloaf with the ketchup. cover and bake at 375 degrees for 1 hour. Remove cover, increase temperature to 400 degrees and bake an additions 20 minutes.
Here is the gravy recipe to go with the meatloaf:
1/2 cup dripping from the meatloaf
1/2 stick of butter
1/4 cup white wine
1/4 cup flour
about 1/2 cup water
In a saucepan over medium heat, melt butter with dripping. Add wine. Whisk in flour until smooth. add water until desired consistency.
Dreamy Apple Butter Pumpkin Pie
Ingredients:
1 (9 inch) pie crust pastry
2/3 cup whole milk
1/2 cup MUSSELMAN'S® Apple Butter
1/2 cup pumpkin puree

1 (3.4 ounce) package instant vanilla
pudding
1/4 cup sweetened condensed milk
3/4 cup frozen whipped topping

Directions:
1. | On lightly floured
surface, roll pastry to 12-inch circle. Place in 9-inch pie plate. Turn
under edge; flute. Mix milk, MUSSELMAN'S Apple Butter and pumpkin puree
by hand until smooth. Add the pudding mix and stir until well combined.
Add sweetened condensed milk and stir until smooth. Fold in whipped
topping. Pour mixture into pre-baked pie crust (bake according to
package) or pre-made graham cracker crust. Refrigerate until ready to
serve. My son did this recipe back in 2008, if I remember, when he did this recipe he added the whole can of sweetened condense milk. It still turned out really good. Week Five Photo Challenge

These pictures are from when I was stationed in the Air Force and was doing an assignment in Germany. One picture is from a trip to Paris and is taken from the Eiffel Tower. The other is from Europa Park, and Amusement Park in Germany.

Peanut Butter Cookies w/ Peanut Butter M&M's

These are a very tasty peanut butter cookie. We had bought a few bags of Peanut Butter M&M's to add into some cookies. I found a peanut butter cookie recipe on Cooks.com and then added the bag of M&M's. So here is the recipe.
Ingredients:
1 cup butter
1 cup peanut butter
1 cup sugar
1 cup brown sugar
2 eggs
1/2 teaspoon vanilla
2 cups flour
1 teaspoon baking soda
1 bag Peanut Butter M&M's
Cream butter with sugars and peanut butter. Add eggs and vanilla. Add the flour and baking soda. fold in the M&M's. Bade at 350 degrees for 8 minute or until done.

Week 4 of Photo Challenge
So we are now into week 4 of the 20 week challenge. This week theme is dinner. Pork steak with tomato sauce and cheese, corn, and instant mashed potatoes
So this is taken with the iTouch. I might eventually use my actual camera, but I have found that I like the convenience of using the iTouch. I have it with me all the time. I have to go find my camera, and we lost the cable for the camera. It is inconvenient to download pictures to the computer.

Healthy Cookies?

O.K. these are probably not that healthy, but It does have many of the ingredients found in a granola bar recipe. It is a tasty recipe and will make it again. So here is the recipe.
Ingredients:
2 Cups Oatmeal
1 Cup Brown Sugar
1/2 Cup Oil
2 Eggs
1/2 t Vanilla
1/2 Cup Almoonds
1/2 Cup Raisins
1/2 Cup Sunflower Seeds
1/4 Cup Wheat Germ ( I might of put in 1/2 cup, I don't remember)
Combine all ingredients, drop by round teaspoonfuls on greased cookie sheet, bake at 350 degrees for 8-10 minutes or until done.

Chocolate Pudding Oatmeal Cookies


The recipe:
1 c. butter
3/4 c. brown sugar
1/4 c. sugar
1 small box of chocolate pudding (you could use another flavor)
2 eggs
1 1/4 c. flour
1 t. baking soda
3 1/2 c. oatmeal
Cream the butter with the brown and white sugar. Add the eggs and pudding. Add remaining ingredients
Drop of teaspoonfuls on greased baking sheet. Bake at 350 degrees for 8-10 minutes. Cool on wire rack. Enjoy!

I made these really, really, really tasty Cake Donut Muffins. I found the recipe while I doing some blog hopping. The recipe comes from A Pretty Life In The Suburbs.
This recipe is a hit and I will make it again.

Week 2 of 20 Week Photo Challenge

So now we are in week two of the 20 week photo challenge. This week it is what make me smile. In this photo I love my cats. I have three at home. For me it is challenge to get good pics of the cats because they don't hold still. It is almost a rare opportunity when I can get a good shot of the cats. This is Mr. Fugi, he is the the first cat to move into the house over 6 years ago. I also took this with my iTouch.

Butterfinger Dessert

This could be one of the BEST desserts you EVER make. This is SOOOO good and easy to make. The hardest part could be making the angel food cake, but we usually ending up buying it pre-made. So you will need:
1 angel food cake
1 Large box vanilla instant pudding mix
3 Cups milk
1 Large tub of Cool Whip
About 6-8 Butterfingers candy bars
Cut angel food cake in about 1 in squares, layer 1/2 of the cake in 9x13 dish
Combine milk and pudding mix. Crush candy bars and add to pudding mix ( you can reserve some for garnish). Fold in Cool Whip.
Pour 1/2 of the pudding mixture over the first cake layer. Add remaining angel food cake. Pour the remaining pudding mix. Garnish with crushed Butterfingers, if desired.
