Show Your Stuff #39 - Chicken Parmesan

Welcome to another edition of Show Your Stuff. It it always interesting to see what everyone is sharing.

Last week I was in the mood to make Chicken Parmesan. I have never made it before and wanted to try it.
I have had my husband help me out with the recipe.

4 chicken breasts, pound thin
Marinate the chicken in butter milk for 3 hours.

For the breading combine:
1/4 cup corn meal
1/4 cup flour
2 T garlic powder
1/4 cup Parmesan cheese
2 T pepper
2 T oregano
1 t baking soda
2 T basil
1/2 T salt

Heat frying oil to 375 degrees. coat the chicken in the breading, removing the excess. Fry for about 6 minutes or until the chicken is done and golden brown.

Meanwhile cook linguine noodles and heat marinara sauce (I used small package of noodles and a can of spaghetti sauce.)

Once the noodles are cooked add just enough sauce to coat the noodles and lay in 13 x 9 inch pan.

 Lay the cooked chicken on top and cover with remaining sauce.

Cover with mozzerella cheese.




Bake at 350 degrees until the cheese is golden brown.

Made Buttermilk Waffles

I made up some tasty buttermilk waffles. Whatever recipe you use to make your waffles, the secret to light and fluffy waffles or pancakes is to beat up the egg whites to stiff peaks and fold it into your batter.

Meatballs and Brownies

I made turkey meatballs for dinner. It turned out o.k. It has onion soup mix, bread crumbs, egg, and a little ketchup in it.

So afterwards my husband asks what's for dessert. I am in the mood to make brownies. I found a recipe on the back of the baking cocoa container. The original recipe had nuts in it, but I substituted chocolate chips. We will see how it turns out.

Healthy Cookie Variations

Peanut Butter

I did two variations to my Healthy Cookie Recipe


Peanut Butter Healthy Cookies

2 Cups Oatmeal
1 Cup Brown Sugar
1/2 Peanut Butter
 2 Eggs
1/2 t Vanilla
1/2 Cup Almonds
1/2 Cup Sunflower Seeds
1/2 Cup Wheat Germ

Combine all ingredients, drop by round teaspoonfuls on cookie sheet and bake 8-10 minutes at 350 degrees.

Chocolate Chip Healthy Cookies

Chocolate Chip
2 Cups Oatmeal
1 Cup Brown Sugar
1/2 Cup Oil
2 Eggs
1/2 t Vanilla
1/2 Cup Almonds
1/2 Cup Chocolate Chips
1/2 Cup Sunflower Seeds
1/2 Cup Wheat Germ

Show Your Stuff #37 - Sweet And Sour Meatballs


This week I am sharing a Sweet and Sour Meatball recipe.
This recipe originally had cubed boneless pork, but I had ground turkey and wanted to try a meatball version. So here is the recipe.

Meatball ingredients:
1 pound ground turkey, or ground chicken, or ground pork
1 egg
1/2 cup bread crumbs

Vegetables
1 clove of minced or pressed garlic
1 large green peeper seeded and diced
1 medium onion, cut into one in square
2 medium carrots, cut diagonally into 1/4 inch slices
1/2 cup canned pineapple
2 medium tomatoes, cut into one inch cubes

Sweet and sour sauce:
1 T cornstarch
1/3 cup brown sugar
1/4 t ground ginger
1 T soy sauce
1 T dry sherry (I use cooking sherry)
1/4 cup white wine vinegar
1/4 cup chicken broth

Mix all the ingredients, for into meatballs, fry in a few tablespoons of vegetable oil. Once the meatballs are cooked, remove from the pan and set aside.

In a the pan with about 2 T oil fry up the vegetables except the pineapple and tomatoes for about few minutes

Mix all the ingredients for the sweet and sour sauce, add to the vegetable, mix in the pineapple, tomatoes, and the meatballs. Cook until the sauce is thick and the meatballs and heated. Serve with noodle or rice,

My husband loved it.I was a little dissappointed. I did not think it was sweet enough for me. However it was still good. So you can find the recipe here.
