Caramel-Coconut Squares



I found a vintage recipe card among my mother-in-law's collection of recipe cards I had to try. It is the Caramel-Coconut squares. This is very similar to the After School bars. These bars have a cookie base instead of a graham cracker base. 



So here is the recipe:

Make the cookie base:

1/2 cup soft butter

1/2 cup sifted powder sugar

1 cup flour.

Cream the butter and sugar, and add in the flour. Put in an ungreased 9-inch square pan and bake at 350 degree F for 12-15 minutes

Meanwhile, combine:

14 ounce can of sweetened condense milk

1 cup of butterscotch pieces

1 1/3 cups of coconut

1 teaspoon of vanilla,

Once the cookie layer is baked, add the sweetened condensed milk mixture, and bake for 25-30 minutes more. The outer edges will be golden brown, The bars will set once cool.


I thought of adding chocolate chips, you easily could along with some nuts. I feel there can be some versatility to the recipe.

My Son Made Chili

Chili is one of those recipes that my son just troughs stuff together, This version has ground beef,  tomatoes, celery, shallot, peppers, broth,  black beans, and spices. No canned tomatoes of any kind, which I thought was odd.
I topped it with cheese, sour cream, and green onion. It was tasty, I don't have a recipe, just like the name of this blog, my son was "just winging it".

What I Ate During a Road Trip to Dodge City, Kansas

We recently had a road trip to Dodge City for my husband's birthday. I am sharing what I ate during the trip. First, we stop at our local IHOP for breakfast before leaving town. I got a breakfast burrito.

 We had to stop here. We rolled into town around 2 in the afternoon. This would be our last meal of the day. I would not have known this place existed if it wasn't for the Maps app on my phone. 

I got a Ruben, it was tasty.


We didn't have dinner. We had gone to an arena football game that night.


There was an IHOP in town. I had a grilled cheese with a side of pancakes for breakfast.
Later on, we got a Smoothie at a local ice cream place. That night we had Pizza Hut. We had a server who was still very new and struggled with serving us. My husband worked in the restaurant business for over thirty years. He was angrier with the management for not properly training our server.
For our final full day in Dodge City, we went to Dodge House for breakfast.

I got an omelet.  It was a little spicy. It had jalapenos in it.

I had always added ketchup to my eggs.


For lunch, we stopped in at a Mexican restaurant in a local mall. 

For dinner that evening,  We were recommended  to eat at Casey's Cowtown Club. I got a steak salad.
My husband and I shared what I believe is a maple cake and cheesecake. It was delicious.

We went back to Dodge House for breakfast before leaving town. We again went on a vacation during its off-season. We may have to try Dodge City again sometime during the summer months. I believe there usually is a dinner and a show at the Boot Hill Museum during the summer.
