Thanksgiving Pot Pie

 I know most of us have leftover turkey from Thanksgiving. We did this last year and loved it, so we did it again this year. We have individual size pots that was filled with turkey, some mixed veggies, gravy and cheese. I made a bread dough to top the pies, but you could use a pie crust recipe. These were baked for about 45 minutes.

I had plenty of bread dough left over, so I made them into cinnamon rolls. :)

Cinnamon Waffles

We made up some really tasty waffles adding cinnamon and vanilla to a favorite pancake recipe. This would work well as either pancakes or waffles. So here is the recipe:
2 cups flour
1/2 cup sugar
2 T baking powder
1 t salt
1T cinnamon
2T vanilla
6 T melted butter
*2 eggs
2 cups milk

Mix dry ingredients, add wet ingredients. mix well. Make waffles in waffle iron according to manufactures directions.

*Now what I do for waffles is that I separate the eggs, whip up the egg whites and fold into the waffles batter.

Centennial Molasses Spice Drops

I am usually not into "spice" cookies, but I really like how these turned out. This recipe comes out of Betty Crocker's Cookie Book. This recipe does have cider vinegar in it. The cook book mentions that vinegar was used in cooking a lot over hundred years ago, even in the baked goods.

So here is the recipe:
2/3 cup butter - I used half shortening and butter
2/3 cup sugar
2 eggs
2/3 cup molasses
3 cups flour
3/4 t baking soda
1/4 t salt
3/4 t cinnamon
3/4 t ginger
1/4 cup cider vinegar - I used apple cider vinegar, it is was I had on hand

Heat oven 374 degrees
Mix butter, sugar, eggs, and molasses. Blend dry ingredients. Alternately add dry ingredients and vinegar. Drop dough by teaspoonfuls on a greased cookie sheet. Bake 8-10 minutes, or until no imprints remain when lightly touched.

Deviled Eggs

One of my favorite party foods is Deviled Eggs. We made some up last weekend for a family gathering. So here is ther recipe:

9 Hard Boiled eggs, cut in half with yolks separated.
Add to the egg yolks:
2 Tablespoons Sweet Pickle Relish
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder
2 Tablespoons mustard (prepared, not the dried mustard)
3 Tablespoons Mayonaise

Mix well and put yolk mixture in a pipping bag and evenly add yolk mixture to the egg white shells, garnish with some paprika.

Potato Salad

I had planned on posting this recipe a few months ago, but I did not have a photo to share. I had convinced him to make potato salad so I could get a picture. We had family coming over and I though potato salad would make a nice addition to ham sandwiches. So here is the recipe:

3 pounds russet potatoes, peeled and cubed
10 hard boiled eggs, cooled and shelled
1/2 cup honey mustard

1 cup diced onions
1 cup diced celery

1/2 cup mayonnaise
1/4 cup sour cream
3 tablespoon fresh dill

Boil potatoes until cooked, but not mushy, rinse and cool. Add eggs, onions, and celery. Mix gently. In a separate bowl mix the remaining ingredients. Add to the potato mixture. Refrigerate 2-4 hours. Serve cold.

Ham Steaks and Pineapple

With the Holidays just around the corner, ham and turkey is going to be a part of the holiday meals. So I am sharing my husbands recipe for ham steaks with pineapple.

3- 4 ham steaks
12 oz can pineapple rings with juice
1 cup of brown sugar

Arrange ham steaks in a casserole dish. Mix the pineapple juice with the brown sugar. Arrange pineapple rings on top of the ham steaks. Bake at 350 degrees for 35 minutes.

Pork Chilli Mac

We made up some chili using pork and adding some noodles. So here is the recipe:
2 pounds of pork, cubed
1 finely diced onion
three 15 oz can of kidney beans, drained
12 oz can tomato paste
26 oz can tomato soup
14.5 oz can diced tomatoes
6.5 oz can of mushrooms
2 tablespoons seasoning salt
2 tablespoons cinnamon
1 tablespoon black pepper
1 tablespoon salt 10 oz noodles
chili powder to taste - we used 1/4 cup

In large pot, brown onion and pork in 2 tablespoon of olive oil. Add remaining ingredients except noodles. Simmer for about 2 hours, add noodles and cook until tender. about 20 minutes. Enjoy, this will make a lot.
