Peanut Butter Bread

I have seen a You Tube video on Peanut Butter Bread, I knew I had to make it. I love peanut butter and I imagined I would love this bread. It is delicious, but it turned out crumbly. This bread uses baking powder as a leavening agent and it almost reminds me of a biscuit

I also made it into FrenchToast. If I made this into the future I may have to tweak it a little, or a lot. I might also go look into another recipe.

Is Everyone Baking?

I recently went to Target to get groceries and noticed the slim pickings in the baking isle. I have to buy the expensive chocolate chips because the cheaper versions were gone. Has the coronavirus got us doing more baking? Well I guess I have done a little more baking and cooking more at home overall. I not only have made chocolate chip cookies, I have done ginger snap cookies, raisin spice cookies, and just today I did cinnamon rolls.

So pictured are chocolate chip cookies using the Doubletree recipe that they recently published. It is very similar to the Toll House cookies. The exceptions is that it has a little lemon juice and cinnamon. It also has some oatmeal in it, but not a lot. It also is baked at a lower temperature and cooked longer. It also has to stay on a baking sheet for an hour.

Peanut Butter Banana Smoothie Bowl

I was in the mood to make a banana smoothie. Adding it in a bowl is a last minute thing. So as you can see there us nothing green in here. I simply did not have anything green.

So what did I add. I added ingredients found in Peanut Butter Oatmeal Bites.

First I added some oatmeal and flax seed (I don't remember the exact amount, maybe a couple of Tablespoons of each). Blended the two down until it was a finer powder. I added a banana, about 1/8-1/4 cup of peanut butter, little bite of vanilla and molasses (don't judge, I like molasses) and just enough milk until it was the consistency of a smoothie.

I topped it with some mini chocolate and white chocolate chips and some cashews.

It turned out that the banana was the predominate flavor. Next time I might leave out the oatmeal and flax seed. 

However it was tasty overall, I might tweak this more in the future.

Fish and Chips

 It is a Friday night and I decided to make fish for dinner. I had some Pollock in the freezer and I went to You Tube for inspiration on how to cook. the fish. I had come across Gordon Ramsay's video. The video demonstrates five different fish recipes, but what caught my attention was the first recipe on the video. So I made fish and chips
First I made the potatoes. Peal them, cut them so that they look like French fries. Blanch them in boiling water for about 3-4 minutes. I put a light coating of oil on the fries and seasoned them with salt and seasoning salt. For the fish I cut them into sticks, salted them and let the fish sit for 20 minutes like it said to do in the video. Then I coated in seasoned flour, dipped in egg wash, and dipped in panko, which in my case I had Italian seasoned panko. Deep fried them, by husband was frying them so I think it was a few minutes on each side.

My son had made a fish sandwich with the fish fingers and the fries. He seamed to enjoy this.
I  have another package of fish in the freezer and I will make this again.

Tasty Eats

I haven't done a tasty eats blog in a while. With things going crazy now with the Coronavirus epidemic, we find ourselves eating more at home. Overall this is not a bad thing, but I do miss eating out in restuarants.

One night for dinner my husband made Philly egg rolls and a strawberry egg roll. I did not get a change to try these as I was experiencing an upset stomach at the time.

I took a picture of this HUGE banana split my husband made for himself.
This is a banana yogurt smoothie, I might of added peanut butter to this, I don't remember.
I made this dish after watching this Six Layer Dish recipe on You Tube. I has a layer of potatoes on the bottom, a layer of ground beef, a layer of sliced onions and green peppers, and topped off with a can of condensed tomato soup. The actual You Tube recipe can be found here.
Finally, I have chicken salad on top of a waffle. This particular chicken salad has cashews and raisins in it. I try to add a nutty and fruity element with chicken salad and not just have chicken and mayo.
