Show Your Stuff #6 - Caramel Cluster


It is another edition of Show Your Stuff. Yes I know, I have the same picture of the Caramel Clusters I had last week, however this time I am sharing the recipe.

Caramel Clusters

Ingredients:
1 1/2 12oz packages of semi-sweet (or milk chocolate) chocolate chips
1 Tablespoon butter
11 oz package of Kraft Caramel Bits

Mix chocolate chips and butter, and melt over a double boiler. Remover from heat and let the chocolate cool down a few minutes. You don't want it too hot or it will melt the caramel. Add the caramel bits. Spoon teaspoon size clusters onto cookie sheet cover in parchment paper. Let solidify in refrigerator. Once solidified, store in airtight container in refrigerator.

I am showing off some chocolate candy my husband did recently, it is chocolate cover pretzels and caramel clusters using caramel bits.

Oven Baked Tilapia With Shrimp Stuffing

We are introducing this fish dish my husband made the other day. It shrimp stuffing layered between two pieces of fish. I would consider this healthy and tasty.
So here is the recipe:

Fish:
8 Tilapia fillets
1 cup of Panko breading
salt and pepper to taste
Coat fish in panko breading, bake fish at 350 degrees for 10 minutes. In the meantime prepare the
stuffing:
2 cups of salad shrimp
1 T garlic
1T olive oil
2T basil
2T oregano
1/4 of a onion, diced
1/2 tomato, diced

Mix all ingredients, heat on medium heat on stove top until hot. To plate, place fish on plate, add 1/2 cup stuffing on top fish, top with another piece of fish.
