Birthday Meal



It is our son's birthday, he requested chilli burgers and chocolate slated caramel cake. Dad did a great job making these for him. Both of these recipes came out of the Food Network Magazine.

Loaded Chill Cheeseburger: The burger has cheese, chili, BBQ sauce, and onion rings.
Chocolate-Orange Cake with Salted Caramel: The cake is chocolate, with a chocolate orange ganache and salted caramel.

Easy Orange Chicken and Fried Rice


Turn your ordinary chicken nuggets into something extraordinary. This is an easy orange chicken recipe along with a fried rice recipe.
 
 
 
 
Easy Orange Chicken

Orange Sauce
 
 
 
1/8 cup Soy sauce
1/4 cup sugar
1/4 cup White Vinegar
1 Tablespoon Sesame oil
zest of 1 orange (after zesting squeeze juice into sauce)
3 Tablespoons toasted Sesame seeds

Mix all in a 1 quart sauce pan. bring to boil, thicken with cornstarch diluted in water. Add sesame seeds. reduce heat and keep warm.

1 1.5lb bag chicken nuggets

Deep fry nuggets according to package directions. Drain nuggets on paper towel, then place into mixing bowl add sauce and stir well. Serve over rice.

Dave's Dirty Rice

2 Cups of rice
3 1/2 cups water
1/2 teriyaki sauce 

 cook as directed on package

While rice is cooking Saute:
2 tablespoons Olive oil
1 onion (diced)
1 red pepper (diced)
3 stalks celery (diced)
4 oz. shredded carrots

After veggies start sweating add 6oz. frozen peas and cook until hot.

In large fry pan, add 2 table spoons olive oil and 3 eggs (slightly beaten), cook until eggs are 1/2 done. Add rice, veggies, and 1/4 soy sauce to fry pan and cook on low for 10 minutes. Serve hot.

Show Your Stuff #86

This is the easiest and tastiest macaroni and cheese. 
I had pinned this recipe a while ago and I finally got around to making it. This recipe does have Alfredo sauce in it and I thought that it had the distinct flavor from the Alfredo sauce.

Tropical Mix Cookies


Edit March 26, 2023: So it turns out I forgot to add sugar to the recipe. I don't remember how much sugar was in this cookie, so I went with 1 1/2 cups. I also added vanilla, because I think cookies need that flavor.

Wal-Mart had a bag of tropical mix for a $1.
I still had a half bag of chocolate chips.

It was time to make cookies!

These cookies are made up of ingredients I got from my mother-in-law. She had a stroke a while back and can no longer cook. One of the items I used for the first time is self-rising flour. I was not anticipating the texture of the cookies. It lacked the chewiness I was using too and it had more of a biscuit or cake-like texture. It was not bad. I will just not use self-rising flour again in cookies.   

So here is the recipe - using all-purpose flour

1/2 cup butter
1/2 cup shortening
2 eggs
1 1/2 cups sugar
1/2 cup milk
3 1/2 cup flour
1 t baking soda
1 t salt
1 cup tropical trail mix
1 cup chocolate chips
1 t vanilla

Mix the butter, shortening, eggs, and milk. Stir in the flour, baking soda, sugar, and salt. Add the tropical mix and the chocolate chips. Drop round teaspoonfuls onto a greased cookie sheet, and bake for 8-10 minutes.

Golden Nutty Cinnamon Rolls


I had a vision to make a healthier version of cinnamon rolls based on a Golden Flax Bread recipe on the back of the Hodgson Mill Flax Seed box.  I have to say that these rolls turned out better than I expected. They are really good.

The dough is made in the bread machine, using the dough cycle. I did not add icing to them. I think it is good without it (and healthier). So here is the recipe.

Dough ingredients
7/8 cup water
2 T butter
3T molasses
2 T flax seed
2 cups all purpose or bread flour
1/2 cup whole wheat flour
1 1/2 T non-fat dry milk
1 1/2 t bread machine yeast

Roll Filling
2 T butter, melted
1/2 cup chopped nuts
1/3 cup brown (or white) sugar
1-2 t cinnamon

Add the dough ingredients to bread machine according to manufacture's direction and use the dough setting.

Once the dough is done, roll out into about 12 by 8 inch rectangle. Coat with the melted butter, combine the sugar and cinnamon and add to the dough, cover with the nuts. Roll up from the long end and pinch ends. Cut into 12 equal pieces and place in 9 inch square pan, Let rise until double in size. (30-60 minutes) Bake in 375 degree oven for about 20 minutes or until golden brown.

I found this recipe in blog land and knew I had to make it. It was a lot of work to make this. You have to make two batters, a chocolate and peanut butter batter. I thought it was a lot of work to make, but it was well work it in the end. The recipe is on Busy Mom's Helper and can be found here.

Sausage And Rice Casserole


For dinner tonight  we made this sausage and rice casserole. We used two boxes of  beef Rice-a-Roni. This recipe will list rice and beef base in the list of ingredients. So you have options when making this dish. If you do use the Rice-a-Roni, omit the rice, water, and beef base and make up the Rice-a-Roni according to box directions and layer that on the bottom of the casserole dis.

4 Large Bratwurst cut in 1/2 inch slices
1 Green Pepper, diced
1 Onion, diced
1 14.5 ounce can Diced Tomatoes
2 cups Rice
4 cups water
2 T beef base
6 ounces cheddar cheese

Sauté bratwurst, pepper, onion, and tomatoes until the sausage is cooked. Meanwhile cook rice in beef base until rice is done. Layer rice in 2 quart casserole (9 x 13 in) dish. Add sausage mixture on top of rice and top off with the cheddar cheese. Bake for 350 degrees for 15-20 minutes.

Fancy Shrimp Rice



Sesame seed oil and teriyaki sauce give this side dish an Asian flair. My husband this up along with salmon burgers and crab cakes.

So here is the recipe for Fancy Shrimp Rice

4 cups water
2 cups long grain rice
4 ounces of salad shrimp
8 ounces of mixed vegetables
1 teaspoon sesame oil
1/4 cup teriyaki sauce

Mix all ingredients
in a  2 quart sauce pan. Bring to boil, cover pan and reduce heat to low. cook for about 20 minutes or until the rice is done.

Cinnamon Sugar Cookies


Crispy rice cereal gives this cookie an extra crunch.

3/4 cup butter
1 cup sugar
2 eggs
1 teaspoon cinnamon
1 teaspoon vanilla
2 1/2 cups flour
1 cup crispy rice cereal
1 teaspoon baking powder
1 teaspoon salt

Mix butter, sugar, eggs, and vanilla. Add the dry ingredients. Form 1 inch ball, roll ball in sugar, place on  baking sheet and flatten using bottom of a glass. Bake in 350 degree oven for about 8 minutes.

Cocoa Pebbles Chocolate Cookies - Show Your Stuff #83


Happy Fourth of July. It is time again for another edition of Show Your Stuff. This time I have Cocoa Pebbles Chocolate Cookies.

2/3 cup butter
1 cup sugar
1 egg
1/3 cup buttermilk (I just used milk)
1 t vanilla
1 3/4 cup flour
1/2 cup cocoa
1 cup Cocoa Pebbles
1/2 t baking soda
1/2 t salt

Mix butter, sugar, egg, milk, and vanilla. Combine dry ingredients and mix well with the butter mixture Drop by teaspoonful's on a greased cookie sheet, bake at 350 degrees for 8 minutes or until done.

Enjoy.
