Chocolate Cookie Covered Peanut Butter Cookies

This cookie clearly is a hit. The title is long, but it is exactly what it is, a chocolate drop cookie covering a peanut butter cookie.  I came about as a brain storing session with my son and husband. We were debating on weather we want to make a chocolate or peanut butter cookie and then the idea came up to combine them.

So here is the recipe:

Pre-heat oven to 350 degrees
Make a peanut butter cookies

1/2 cup shortening
1/2 cup peanut butter
1/2 cup sugar
1/2 cup brown sugar
1 egg
1 1/2 cup flour
1/2 t baking powder
3/4 t baking soda
1/4 t salt

Mix shortening, peanut butter, the sugars, and egg. mix the dry ingredients and combine with the peanut butter mixture. Set aside and now make the chocolate cookie dough:

2/3 cup butter
1 cup sugar
1 egg
1/3 cup buttermilk (I just used milk)
1 t vanilla
1 3/4 cup flour
1/2 cup cocoa
1/2 t baking soda
1/2 t salt

Mix butter, sugar, egg, milk, and vanilla. Combine dry ingredients and mix well with the butter mixture

On a greased cookie sheet, put a small amount of peanut butter cookie dough on the sheet. I used a melon ball scoop to measure the cookie. Flatten with a fork. The cookie should not measure more that a inch. Top the peanut butter cookie with the chocolate drop cookie dough.  Bake about 8-10 minute until done. Cool on wire rack.

Seafood Crab Salad - Show Your Stuff #17

It is another edition of Show Your Stuff! There are lot of great stuff out there in blog land! So go visit your blog neighbor when you link up. I am sharing my husband's Seafood Crab Salad. It was a big hit yesterday our Lenten church function.
Seafood crab salad

12oz Small bowtie pasta (cooked, drained, and cooled)
8oz Imitation crab meat
4oz salad shrimp
1 green pepper diced
1 pint grape tomatoes (cleaned and washed)
8oz Colby cheese (small cubes)
½ cup Mayonnaise
½ cup ranch dressing
1t Salt
1t pepper
1T oregano
1/2t garlic powder
Cook pasta, while pasta is cooking clean and dice Pepper, crab meat, and cheese. Mix Crabmeat, shrimp, pepper, tomatoes, and cheese, toss and set aside. In separate bowl mix mayonnaise, ranch, and all spices, mix well and set aside. After pasta is cooked cool by running under cold water, drain well, add crab mix, stir, add dressing, mix well and serve cold.

Baked Chicken Salsa - Show Your Stuff #16

Here I am showing off a Baked Chicken Salsa recipe created by my loving husband with 30+ years of restaurant experience. It is also another edition of Show your Stuff. Feel free to show off anything your are proud of, weather it be recipe, DIY, family, photo, ect.So here is the recipe:

Baked Chicken Salsa

You will need 1 Whole Chicken cut in half lengthwise

Ingredients for the chicken rub:
3 T seasoning salt
3 T garlic powder
1 T pepper
1 T salt

Mix chicken rub ingredients and rub chicken with it, place halved chicken in baking dish for 65 minutes or until done. (internal temperature of 165 degrees Fahrenheit)

Meanwhile prepare the salsa:

1 diced red pepper
1 diced onion
3T olive oil
1 12oz can diced tomatoes
1 8 oz can kidney beans
1 T paprika
1 T garlic

salt and pepper to taste

Saute onions and peppers in the oil until tender, and beans, tomatoes and spices. simmer 10 minutes. Serve over the chicken.

Avocado Grilled Cheese


I saw somewhere in blog land an Avocado Grilled Cheese, so I decided to make me one. I was pretty good, you may enjoy this if you like avocados. For each sandwich I used: 2 slices of rye bread, 1/2 of an avocado, 1 slice of American cheese, and 1 slice of Monterrey Jack cheese. I spread a little mayonnaise on each slice of bread layered avocado between the two different cheese, and butter the outside of the bread. Brown each side of bread in a skillet over medium heat until brown and cheese is melted.

Gift Bags

 I did some searching on the Internet to look for a tutorial on making a gift bag for a birthday gift. I came across this simple one from You Tube here.

 The first bag I did is the black and white one with the birthday logos. I used gift paper to make this bag. I did nothing really fancy with it I just taped the top shut. The original instructions in the video trims the top with scrap booking scissors and punch holes with a hole punch for the ribbon. I own neither.

So I made a second one just using 8 x 11 computer paper. I printed an image on the paper to decorate the bag. I hand cut spikes on top and crocheted the handles and taped them in the bag.

The one with the 8 x 11 paper is not very big, it is the good size for gift cards, jewelery, or any small item. If I ever do craft shows again, I may make up these cute gift bags.

Macaroni Salad Recipe

I had my Husband make up some Macaroni Salad for a church pot luck, being held now every Wednesday during Lent. So here is his recipe:

Macaroni Salad

8 oz small pasta shells  
8 oz cubed Colby Cheese
4 Stalks of Celery
2 Carrots - jullianed
2 T Prepared Mustard
2 Cups Mayonnaise
1 T Parsley
1 T Celery Salt
Salt and Pepper to taste

After cooking pasta according to package directions, make sure the noodles are cool and mix remaining ingredients in large mixing bowl. Serve Chilled

Show Your Stuff # 14

Thanks to everyone who has participated so far, I am sharing some pics of Lee's Restaurant, in Lincoln, NE. We went there for our Anniversary. My husband use to eat there and it has been twenty years since his last visit. He wanted to go back for the Fried Chicken and The Onion Rings. However he says the decor has not changed in twenty years, realistically it looks like it has not changed since the 60's and 70's. Overall the food and service was good and reasonably priced.

Seafood Hoagie

We had seafood hoagies yesterday. It was really good.  so here us the recipe.
Seafood Hoagie by David Huston:

8oz Crab meat
2oz mini Salad Shrimp
¼ cup Diced Tomato
¼ cup Shredded Carrots
1oz Sliced Mushrooms
1 T Oregano
4 Hoagie rolls
1 cup Mayonnaise
Mix all ingredients well in mixing bowl, cut hoagie buns in half lengthwise, Fill with mixture. Serve cold, serves 4 people.

Show Your Stuff #13 - Chocolate Cover Potato Chips

Yep , Chocolate Covered Potato Chips. It is SO good. I melted a bag of chocolate chips and used a half a bag of ridged potato chips (crushed) to make clusters. It is time again for another week of Show Your Stuff. Eventually I will use thumbnail photos, but I am not ready yet to pay for the service. I am sure one day it will be worth it. So go ahead and link up anything you are proud to show off.
