Mosaic Food

I guess this is an edition of Tasty Eats, except this first dish was not tasty at all. I tried a vintage recipe out of Workbaskets magazine. It looked promising but I did not like it.

The sandwich was tasty though.

I did a post on the noodles:

I also did a post on the pumpkin nice cream:

I made cinnamon applesauce muffins mainly to use up my remaining apple sauce I had.
I took a picture of some mushrooms during a past walk. Could not tell you if it safe to eat.

Comfort Noodle Dishes

Today I am sharing some comforting noodle dishes.  The first one is an easy Sour Cream Noodle bake. I was initially drawn to this because it layers like lasagna. There is a meat and tomato layer and a cottage cheese, sour cream, and noodle layer. It is really tasty. It kind of tastes like beef stroganoff. Maybe next time I will incorporate mushrooms.

This one is mac and cheese. This recipe uses a different kind of noodle. I was concerned that the recipe that I used calls for 2 cans of evaporated milk.  As you can see it initially looks like a soup. I did end up baking it in the oven. It did set up more once it baked in the oven.

Speaking of mac and cheese. I don't think I ever go around about the Cheeto Mac and Cheese I bought at the store. It was out on sale and I thought it was cool to try it. It does taste like Cheetos in mac and cheese form.  However, I would stick to just getting The Kraft mac and cheese in the blue box. This was just a novelty and you don't get as much as you would get in the original blue box.

Road Trip Tasty Eats

I did a post about our road trip to the Meskwaki Casino on my other blog.  So I thought I would do a tasty eats edition on this road trip.

We started out having breakfast at IHOP (International House of Pancakes) My husband and I both had French Toast. I did not take a photo and got this one on the web, I assume the photo belongs to IHOP.

When we got to the casino had lunch at restaurant at the casino. We got a Hawaiian pizza and cheese sticks. Hawaiian pizza traditionally has Canadian bacon and pineapple. This one also included ham and bacon. It was delicious. Unfortunately my husband and I could not finish the pizza and we did not save the left overs.

Even though the casino has a hotel, we stayed at a different hotel.  Next to the hotel we were staying at was a Mexican restaurant. I had spinach cheese quesadilla and churros. Not sure what my husband had for dinner. He had fried ice cream for dessert.

Like most hotels, ours had free breakfast. They had a machine that made pancakes. We have never seen one before. It make two pancakes at a time.

Before heading home, we stopped at the casino gift shop to redeem the points we earned. I got some caramel corn with chocolate drizzle.

Finally for lunch we stopped at a Country Kitchen. I got an Avocado Jack Wrap and Pickle Fries. Sorry I did not take a photo.
Overall, I ate way too much food on this trip.

Fish Stick Tacos

We have been getting Real Simple magazines in the mail and the September 2021 edition has a fish stick taco recipe in it. I knew I wanted to make it. It is easy to make too. These tacos have a cabbage slaw that is made up of cabbage, sauerkraut, apple cider vinegar and salt. We added cheese to our tacos. I added mayo to mine. The recipe suggests Greek yogurt or sour cream.

I did find the recipe online, you can find it here:

Apple Pancakes

I wanted to make this pancake recipe after seeing it in a cook book I forgot I had. I had the apple sauce and it was easy to make.

To my surprise, my husband likes this recipe.

To make this recipe is used:

1 egg (the original recipe said to use an egg white.)
1 cup of pancake mix
1 cup of applesauce
water or apple juice if needed to make the batter thinner
a little cinnamon (optional)

Combine all the ingredients, Pour about 1/4 cup of the batter onto a hot greased griddle. cook until the pancake is puffed up and dry around the edges. Turn and cook until it is golden brown. It makes about 6 pancakes.

I might try to make this recipe from scratch.
