Deep Fried French Toast - Show Your Stuff #82


Deep Fried French Toast Using Banana Bread
It is time again for another edition of Show Your Stuff. I can not express my thanks to everyone who faithfully links up every week.

This week I am sharing Deep Fried French Toast, and Raspberry Bread.

One of our many kitchen toys is a deep fryer and it does get used a lot. One day out son made up some deep fried French toast using cut up hot dog bun. In the picture is deep fried French toast using cubed banana bread. It turned out really tasty.

So this recipe is not exact, when the guys cook, they usually eyeball it. This recipe if for one serving.

First, make an egg mixture with about, 2 egg, 1T milk,1 T vanilla, 1 t cinnamon, and 1t nutmeg, and 1t sugar.

Cut bread in about 1 inch cubes.
Coat bread in egg mixture
Deep Fry (oil at 350 degrees) for about 2 minutes
if desired (and recommended) immediately coat in powdered sugar
Enjoy!

One of the next flavors we wanted to introduce in the bread is raspberry, so now the next task was to make a bread with raspberry flavoring. What I did was pull another one of our many kitchen toys, the bread machine. I followed the sweet roll recipe from Food.com and substituted the sugar with 1 small package of raspberry gelatin.
I was pleased on how it turned. We have not had a chance to try it out with deep fried French toast, I have the bread sliced up and stored in the freezer until ready to use.

But I can tell you the bread itself was tasty.

Lemon Drop Cookie


Lemon Drop Cookie
If you like lemon drop candy, you would like this cookie. I was inspired to make these when I found a Lemonhead Cookie recipe. The original recipe uses a lemon cake mix. I decided to go with the Jello cookie route I've done before. I have to admit, this is going to be a big hit for me, I LOVE lemon drops. I would definitely make this again.

So here is the recipe:

1/2 cup butter
1/4 cup shortening
1/2 cup sugar
1 - 3 oz package of Lemon Jello
2 large eggs
1 tablespoon lemon juice
 2 1/2 cups flour
1 teaspoon baking powder
1 teaspoon salt
1/2 cup crushed lemon drop candy (like Lemonheads)

Mix butter, sugar, eggs, and vanilla. Add the dry ingredients. Form 1 inch ball, roll ball in sugar, place on  baking sheet and flatten using bottom of a glass. Bake in 350 degree oven for about 8 minutes.

Show Your Stuff #81 - Baked Doughnuts


What I am sharing today is baked doughnuts. This is actually muffin recipe. I put the dough in a doughnut pan, and it turned out really good. After the doughnut is baked it in dipped in melted butter and covered in cinnamon and sugar. If you don't have a doughnut pan, make it in the muffing pan (as this is muffin recipe anyway) and dip the tops in butter and cinnamon sugar.

So here is the recipe:
Combine:
1 1/2 cups four
1/2 cup sugar
1 1/2 t baking powder
1/4 t nutmug
1/8 t salt

Combine these wet ingredients to add to the dry ingredients:
1 beaten egg
1/2 cup milk
1/3 cup melted butter

Grease your doughnut pan (or muffing tin), fill 2/3 full.
Bake at 350 degree oven.
Muffin tin - 20 to 25 minutes
I would not go that long for doughnuts, I check them at about 10 minutes. You want to bake them until they are golden brown.

Once they are baked, dip them in melted butter and then in a cinnamon sugar mixture.
Cinnamon sugar mixture = 1/4 cup sugar and 1/2 t cinnamon

Banana Strawberry Pudding Dessert


A very simple and tasty recipe.
Crush 15 Oreos, add 1 stick of melted butter with the Oreos and press firmly into 9 x 13 inch pan.

Slice 4 bananas and put on top of crust 

Make one large box of chocolate (or vanilla) instant pudding, using pie direction on the box, pour on top of bananas and crust.

Slice strawberries (about a pint) and place on top of pudding.

Top off with Cool Whip.

Enjoy! Keep refigerated.

Show Your Stuff #80 - Orange Oatmeal Cookies

It is that time again for another edition of Show Your Stuff.  I co-host with Small Fine Print. So this week I am showing off Orange Oatmeal Cookies.  I had come across this recipe Betty Crocker's Cookie Book. This cookie does have a strong orange flavor. So here is the recipe.

2 cup flour
2 cups of sugar
4 t baking powder
1 t salt
1 t nutmeg
1 cup shortening (I used half butter)
2 eggs
4 t grated orange rind
2 T orange juice
 3 cups rolled oats

Heat oven to 375 degrees. Mix flour, sugar, baking powder, salt, and nutmeg. Add the shortening, eggs, orange rind, and orange juice. Add the oats.  Drop level tablespoons on greased baking sheets. bake 12 - 15 minutes

Chicken Strips and Asian Salad

Here are four new recipes, sorry that I did not get a photo of the egg rolls. I personally did not care for the ginger dressing, but I personally don't care for ginger.

Chicken Strips
2 lbs. boneless chicken strips
2 cups flour
1 cup milk
2 eggs
2 cups panko bread crumbs
salt and pepper to taste
1 Tablespoon ground ginger

Mix flour, ginger, salt, and pepper in one bowl, set aside.
Mix eggs and milk in 2nd. bowl. Set aside.
Put panko into 3rd. bowl.
Preheat fry oil to 375 degrees
Dip chicken strips in flour mix, then egg mix, then panko, then into fryer. Fry for 6 minutes or until golden brown. Chicken should be 160 degrees internal temperature. Makes 16 chicken strips.

Asian Salad
2 bags garden blend mix lettuce.
1 can baby corn on the cob (well drained)
1 can sliced water chestnuts (well drained)
small bag rice noodles
2 tomatoes slivered
4 oz. mushrooms (washed and sliced)

Make a bed of lettuce in 4 large bowls, divide corn on cob, water chestnuts, rice noodles, tomatoes, and mushrooms evenly among all bowls. Place 4 chicken strips on top of each salad.
 Ginger Dressing
1 cup Vegetable oil
1/3 cup Honey
1 cup white wine vinegar
1/4 cup sesame seeds toasted
1/4 cup minced Ginger
1/4 cup minced garlic

Place all ingredients into a food processor except for sesame seeds. mix on high for 1 minute. Remove from food processor and add sesame seeds. Serve with crispy Asian chicken salad.

Easy Shrimp egg rolls
1 package of 15 count egg roll wraps
 6 oz. frozen peas and carrots mix
8 oz. small salad shrimp (well drained)
8 oz. shredded cabbage

Mix cabbage, peas, carrots, and shrimp in mixing bowl. Place a large spoonful of mix onto egg roll wrap and roll tight closing end with a smear off water. Fry at 375 for 4 minutes. Makes 15 egg rolls.

Chocolate Chip Oatmeal Flax Seed Cookies - Show Your Stuff #79

 That is a really long title for this cookie..but...
Yum! This is a really good cookie that is worthy of being made again.

The differences I made is that I used 1/2 cup butter and 1/2 shortening instead of the Smart Balance spread, and I added 1 cup of chocolate chips.

Hamburger Pasta Dish

You know it is good when they go back for seconds. This is impromptu dish I made for dinner. It has, pasta, tomato soup, can diced tomatoes, hamburger, onions, and shredded cheese.

Deep Fried Twice Baked Potatoes

Really tasty creation from my husband...

Here is the recipe for Deep Fried Twice Baked Potato


4 large russet potatoes

Bake potatoes in oven 375 for 50 min - 1 hr. Let cool

Cut potatoes in half length-wise, and scoop out middle leaving 1/4 - 1/2 inch potato on skin. Place insides in a mixing bowl. Deep fry outside skins until golden brown (3 - 4 minutes) drain on paper towel. While draining,

Mix:
Potato insides
1 small red onion
1/2 cup bacon pieces
1/4 cup sour cream
1/4 cup cheddar cheese
salt and pepper to taste

Mix well smashing the potatoes. Refill fried potato skins with mixture and place on baking sheet. Sprinkle more cheddar cheese on top and bake at 375 10 minutes or until cheese melts. Make 8 halves.
