Chocolate Cookie Covered Peanut Butter Cookies

This cookie clearly is a hit. The title is long, but it is exactly what it is, a chocolate drop cookie covering a peanut butter cookie.  I came about as a brain storing session with my son and husband. We were debating on weather we want to make a chocolate or peanut butter cookie and then the idea came up to combine them.

So here is the recipe:

Pre-heat oven to 350 degrees
Make a peanut butter cookies

1/2 cup shortening
1/2 cup peanut butter
1/2 cup sugar
1/2 cup brown sugar
1 egg
1 1/2 cup flour
1/2 t baking powder
3/4 t baking soda
1/4 t salt

Mix shortening, peanut butter, the sugars, and egg. mix the dry ingredients and combine with the peanut butter mixture. Set aside and now make the chocolate cookie dough:

2/3 cup butter
1 cup sugar
1 egg
1/3 cup buttermilk (I just used milk)
1 t vanilla
1 3/4 cup flour
1/2 cup cocoa
1/2 t baking soda
1/2 t salt

Mix butter, sugar, egg, milk, and vanilla. Combine dry ingredients and mix well with the butter mixture

On a greased cookie sheet, put a small amount of peanut butter cookie dough on the sheet. I used a melon ball scoop to measure the cookie. Flatten with a fork. The cookie should not measure more that a inch. Top the peanut butter cookie with the chocolate drop cookie dough.  Bake about 8-10 minute until done. Cool on wire rack.
