Here I am showing off a Baked Chicken Salsa recipe created by my loving husband with 30+ years of restaurant experience. It is also another edition of Show your Stuff. Feel free to show off anything your are proud of, weather it be recipe, DIY, family, photo, ect.So here is the recipe:
Baked Chicken Salsa
By David Huston
You will need 1 Whole Chicken cut in half lengthwise
Ingredients for the chicken rub:
3 T seasoning salt
3 T garlic powder
1 T pepper
1 T salt
Mix chicken rub ingredients and rub chicken with it, place halved chicken in baking dish for 65 minutes or until done. (internal temperature of 165 degrees Fahrenheit)
Meanwhile prepare the salsa:
1 diced red pepper
1 diced onion
3T olive oil
1 12oz can diced tomatoes
1 8 oz can kidney beans
1 T paprika
1 T garlic
salt and pepper to taste
Saute onions and peppers in the oil until tender, and beans, tomatoes and spices. simmer 10 minutes. Serve over the chicken.
