Cake Mix Coffee Cake


I have been thinking about trying to make a coffee cake that was light and moist. I had a yellow cake mix, so I made this coffee cake.


For the cake:
1 box of yellow cake mix
3 eggs
1/2 cup melted butter
1 t cinnamon

Mix all ingredients and add to 13 by 9 inch pan.

Make the topping:
3 T flour
3T butter
3/4 cup brown sugar
1 C chopped nuts
1 t cinnamon

Cut the flour into the butter, add remaining ingredients. Top the cake batter, bake for 25-30 minutes or until the cake is done.

Crab Roll Ups


Light, fresh, and tasty. Great for a hot summer day. This would also be a great recipe for you next pot luck. This is easy to make too.

Did I mention it was delicious..




So here is the recipe:
Crab roll-ups
8 oz. crab meat (chopped fine)
1 tomato (diced)
2 green onions (diced)
2 oz. mushrooms (diced)
2 Tablespoons taco seasoning
8 oz. Cream cheese with honey and pecans
1 pkg. 6" flour tortillas

In a mixing bowl combine crab meat, tomato, green onion, mushrooms, and taco seasoning. Mix well and let refrigerate for 1 hour. Soften cream cheese to room temperature. Take 1 flour tortilla, smear with cream cheese, spread thin layer of crab mixture, then roll like a cinnamon roll. Cut off jagged ends, and cut into 2" rolls. Serve cold. For an extra kick add 1 small jalapeno to the crab mix.

National Hot Dog Day

Today is National Hot Dog Day. So to celebrate, we had a competition at our house. My husband and my step son each created a hot dog dish

First up is my Husband, he created a Mexican Hot Dog. He has a  black bean salsa on the bottom topped with a hot dog wrapped in bacon and corn tortilla, deep fried.



Here is the recipe:

Mexican hot dogs with black bean/ corn salsa
Mexican hot dogs
1 pkg. hot dogs (your choice of brands)
equal amount of bacon strips
equal amount of corn tortillas

Wrap each hot dog with bacon, then roll each bacon wrapped hot dog with a corn tortilla, secure with toothpicks. Deep fry at 350 degrees for 3 minutes or until tortilla gets crunchy and golden brown. Remove toothpicks and let drain on paper towels.

Black bean/ corn salsa
1 can black beans (drained and rinsed)
8 oz. frozen corn (thawed)
1 tomato (diced)
2 green onions (diced)
1 Tablespoon taco seasoning
Shredded Sharp cheddar cheese

Mix all ingredients and place large spoonful on plate, sprinkle with cheese, and place hot dog on top of salsa. Serve. for extra kick add 1 small jalapeno (diced) to mix.




Second is the dish created by my step son, the Open Face Hot Dog Philly, it had a flat crescent roll on the bottom, and cream cheese mixture with bacon and jalapeno, the hot dog, sauteed pepper and onions, and topped with cheese sauce.


Here is the recipe:

Open faced Philly Dog
1 pkg. hot dogs (your choice of brands)
1 tube crescent rolls
1 onion (cut in strips)
1 green pepper (cut in strips)
6 strips bacon (crumbled)
8 oz. cream cheese
1 batch cheese sauce (see recipe)

lay out crescent rolls flat on sheet tray and cook as instructed on package (do not roll dough). Split hot dogs in half (but not cutting completely through) grill hot dogs until done. In a saute pan saute cook bacon until crisp and remove and drain bacon, in same pan cook onions and pepper until tender. Place crescent roll on plate, smear with cream cheese, add grilled hot dog, add veggies,  and ladle with cheese sauce. For extra kick add 1 small jalapeno to your sauteed veggies.

Cheese Sauce
2 Tablespoons butter
2 tablespoons flour
1 cup milk
1 cup heavy cream
4 oz. shredded Cheddar cheese

In a sauce pan melt butter and whisk in flour until smooth, add milk and cream, whisk until smooth and keep simmering until sauce thickens, add cheese and stir constantly until cheese is melted. Add the bacon crumbles for recipe above.




I HAD to pick a favorite, I went for my husband's dish, because you had me at deep fried.

Mexican Steak and Stuffed Mushrooms

This is couple of dishes by David Huston. For dinner one night we had Mexican Steak and Stuffed Mushrooms. Tomatoes and green peppers compliment both of these recipes. Try this dish like we did, with corn on the cob and shrimp. 




Mexican Steak

3 steaks of your choice
Taco Seasoning (see recipe)
5 medium tomatoes (diced)
1 green pepper (diced)
4 oz. mushrooms (diced)
1 onion (diced)
1/4 cup olive oil
2 bunches parsley
1 bunch dill
3 sprigs mint

Rub steaks with Taco seasoning and let set for 2 hours.
in a mixing bowl place tomato, green pepper,mushrooms, and onion. In a blender add oil, parsley, dill, and mint, then puree. Add puree to diced vegetables and mix well. Refrigerate until served.
Cook steaks on grill till med/ rare, let rest 5 minutes. Top with vegetables and serve.

Stuffed Mushrooms

6 large mushrooms (hollowed out, save inside of mushrooms)
1 tomato (diced)
1 small green pepper
2 oz Swiss cheese
3 tablespoons olive oil
1 bunch parsley
1/2 bunch dill

Place mushroom caps on baking sheet and set a side.
in a blender mix oil, parsley and dill till puree.
Add puree to rest of ingredients and mix well
Stuff mushroom caps with mixture.
sprinkle with Parmesan cheese
preheat oven to 375 degrees and bake for 15 minutes. Serve hot.
