BBQ Smoke Rub and Easy BBQ Sauce Recipe

 

The smoke rub and BBQ sauce is the next in the BBQ series. Check out my previous posts:

Dave’s Smoke Rub 

1 cup Seasoning salt 

¼ cup Garlic powder 

¼ cup Paprika 

½ cup brown sugar 

¼ cup onion powder 

¼ cup pepper 

½ cup chili powder 

Mix all ingredients and rub well into meat.

 

Smoking your meat 

  • Whatever you are smoking, do it low and slow. 

  • Set up smoker (I use mesquite wood) 

  • Rub meat with my Rub Recipe 

  • Place meat in smoker 

  • Cook 250 degree for about 6 hours or until internal meat temp is 140 degrees. 

  • Remove and let rest for ½ hour. 


Easy Sweet BBQ Sauce 

1 bottle of plain BBQ sauce 

¼ cup Brown sugar 

¼ cup honey 

Mix well

BBQ Mosaic Monday



I am continuing on the BBQ themed journey that my husband created over the past week. Check out my first post:

Just Winging It: Best Potato Salad Recipe (jwirecipes.com)

In this post I am sharing recipes that I unfortunately did not get photos for. 

 Twice Baked Potatoes 

 4 Russet potatoes (Baked and cooled) 

3 strips bacon (fried crisp and crumbled) 

1 green onion (diced) 

3 T sour cream 

½ cup shred cheddar cheese (separated into 3rds.) 

Bake potatoes @ 350 degrees till tender (about 60 minutes). Let cool, after cooling cut potatoes in half lengthwise. Scrap out inside of potato and place in mixing bowl (leave about ¼ inch of potato on skin). Place potato skins on baking sheet add 1/3 of the shredded cheese inside each potato skin and bake @ 350 degrees for 12 minutes. While baking, add 1/3 of the cheese, bacon, onion, and sour cream to scooped out potatoes, add salt and pepper to taste, and mash together to make filling. After skins are cooked scoop mixer back into the skins and cover with remaining cheese. Bake @ 350 degrees for 20 minutes. Serve hot. 

 

A tasty way to use up your left over smoked beef.

 Easy Beef Stew (in crock pot) 

3 cups left over beef (cooked and shredded) I had smoked a brisket and used the leftovers. 

3 russet potatoes 

1 small bag of frozen mixed veggies 

1 onion 

2 cups beef broth 

½ cup flour 

¼ cup basil (chopped) 

¼ cup oregano (chopped) 

2 T garlic powder 

Salt and pepper to taste 

Coat beef with flour and add all ingredients to slow cooker. Cook on high for 2 hours then reduce to low and let sit until time to serve. Serve with sour cream and shredded cheddar cheese.

Best Potato Salad Recipe

Over the past week, my husband have been busy making some tasty barbeque based meals. I am starting out with Dave’s Best Ever Potato Salad!

 I have to say, I think my husband's potato salad has to be the best potato salad I have ever had.  When it comes to potato salad, we usually buy the premade stuff in the store. This home made version if far better.  I could not have enough of this. So tasty.



Here is the recipe for this awesome potato salad.

4 russet potatoes (peeled and diced into bite size chunks)

1 green onion (diced)

3 stalks celery (diced)

½ yellow onion (diced)

3 strips roasted red pepper (diced)

Dressing

1 ½ cup mayo (or miracle whip)

½ cup yellow mustard

2 tablespoons celery seed

Boil potatoes in seasoned water (salt and pepper) till soft (but not squishy). Drain and cool in refrigerator. While the potatoes are cooling, dice the onion, celery, onion, and red pepper. In separate bowl mix the dressing ingredients. After potatoes are cooled, mix in veggies and dressing. Stir well and refrigerate till ready to serve.

Soft and Chewy Chocolate Chip Cookies

I made a video making my daughter's chocolate chip cookie recipe she created. I created the video with the pictures I made below:


I thought it would be unique (or not) to show a recipe card. I now have the card in my collection of recipes.

I have to give props to my daughter for coming up with this soft and chewy chocolate chip cookie recipe. This is going to be my go to recipe for soft and chew chocolate chip cookies.
