Raisin Spice Cookies 2.0

So this is it, my final version of my husband's favorite cookie. His mother had made them all the time and insisted I get the recipe from her. I posted the original recipe back in 2011.  In the original blog post, I had mentioned that she gave me the flour measurement for 1 1/2 batches and the remaining ingredients were for a single batch, I thought that was strange to do that.

My husband was asking for raisin spice cookies, this time I looked over the recipe. In the end, I decided to mimic the recipe after a certain chocolate chip cookie I already knew.

So here is the final recipe for Raisin Spice Cookies:

1 1/2 cups sugar

1 cup butter - I used 1/2 cup shortening and 1/2 cup butter

2 eggs

1 teaspoon vanilla

2 1/4 cups flour

1 teaspoon baking soda

1 1/2 teaspoon cinnamon

1 teaspoon nutmeg

1/2 teaspoon cloves

1 teaspoon salt

2 cups raisins

Cream butter and sugar. Combine the eggs and vanilla.

Combine the dry ingredients, and add to the butter mixture. Add in the raisins Mix until just combined.

Drop about 2 tablespoons (I have a cookie scoop) onto a greased cookie sheet (I have a silicone baking sheet) and bake for about 8-10 minutes in a 350-degree oven or until the desired doneness.

That is it, my now goto recipe for raisin spice cookies.
