I was thinking of my husband when I created these cookies. I created this cookie by combining two of his favorite cookies, oatmeal raisin cookies, and ginger snap cookies.
I also wanted to add some healthy stuff to a cookie. This cookie has oatmeal, flaxseed, and raisins. Overall it is still a cookie loaded with sugar. My husband also liked these cookies, so I am likely to make these on a regular basis.
Here is how I made these cookies.
You will need:
1 cup of butter (I used half shortening)
1 cup of brown sugar
2 eggs
1/4 cup molasses
1 teaspoon vanilla
1 1/2 cups flour
1 teaspoon cinnamon
1 1/4 teaspoon ground ginger
1/4 teaspoon cloves
1 teaspoon baking soda
1 teaspoon salt
3 cups oatmeal
1 cup raisins
1/2 cup flax seed
Preheat the oven to 350 degrees F.
First, cream the butter and brown sugar. Then add the eggs. molasses and vanilla. Add all the remaining ingredients. I used a cookie scoop to form my cookies onto a baking sheet lined with a silicone baking sheet. You can use parchment paper or just grease the cookie sheet. Bake 8-10 minutes or until done.
