Is Everyone Baking?

I recently went to Target to get groceries and noticed the slim pickings in the baking isle. I have to buy the expensive chocolate chips because the cheaper versions were gone. Has the coronavirus got us doing more baking? Well I guess I have done a little more baking and cooking more at home overall. I not only have made chocolate chip cookies, I have done ginger snap cookies, raisin spice cookies, and just today I did cinnamon rolls.

So pictured are chocolate chip cookies using the Doubletree recipe that they recently published. It is very similar to the Toll House cookies. The exceptions is that it has a little lemon juice and cinnamon. It also has some oatmeal in it, but not a lot. It also is baked at a lower temperature and cooked longer. It also has to stay on a baking sheet for an hour.

  1. I have been doing so much more baking lately... it's nuts! I am going to have to try that Doubletree cookie recipe. My husband and I vacationed in one two years ago for our anniversary and as our anniversary approaches again this year I have been craving those cookies!

  2. I gained ten pounds just reading your post. I noticed a run on eggs last March and wasn't able to get any for my mother in her last grocery order. I wonder if a chocolate bar would be cheaper than the expensive chocolate chips. I didn't know Target was still open.
    I've been doing a lot more cooking but I have to watch sugar so not doing much baking and not too sure about using sugar substitutes.

  4. I like the look of the sheet pan cookies. In the beginning of quarantine I was baking yeast bread about once every 7-10 days. I switched to biscuits and slabs of bread just because I like to change it up. I also made a lot of muffins once. Thankfully I haven't done much more baking than that. When I go to the supermarket I see the flour, yeast and baking powder is usually all gone or there are just a few small bags of flour.

  7. My husband and I made the Doubletree cookies this weekend. It's Wednesday and they were gone yesterday. They were so good! Yum! Guess it's time to make more!

  9. I haven't been baking but I've been cooking lots of dinners and fixing lots of breakfasts. This is different than my normal way of doing things. At least it gives me daily activities. The down side is I don't get to have the fun of shopping for the ingredients except online. - Margy
