Basic Oatmeal Cookies

I am not going to lie, I found this recipe on the back of the oatmeal container. However, it is really good and I want to jot it down for future reference.

1 cup butter (I use half shorting and butter)
1 cup sugar
1 cup brown sugar
2 eggs
1 t vanilla
1 1/2 cups flour
1 t baking soda
1 t salt
3 cups oatmeal
1 cup nuts (optional)
1 cup raisins (optional)

Combine butter, sugar, and brown sugar until creamy. Add the eggs and vanilla. Combine flour, baking soda, and salt and add to the butter mixture. Add remaining ingredients
Roll into 1 tablespoon size balls  place 2 inches apart on greased baking sheet. Bake 12 minutes or until done. ( I did mine in 8-10 minutes)

So pictured I add 1 cup of crushed cereal (corn flakes and Special K mix) and I also coated the cookie balls in the crushed cereal before baking.

  2. That looks terrific. I'm not much for baking these days ... not enough time in the day.
