Banana Cranberry Oatmeal Breakfast Cookies


 

I have seen this cookie on My Fitness Pal, and I knew I had to try it. The recipe on the site has 3 ingredients. Mine has 4 ingredients. Oats, bananas, sunflower seeds, and dried cranberries,


Pulse in a food processor 1 cup of oats until it is a flour-type consistency. 


Mash 3 medium bananas

Add the pulsed oats, an additional 1/2 cup of oats, 2 tablespoons each dried cranberries and sunflower seeds



Let the mixture sit for 5 minutes.

Drop by teaspoonfuls on a baking sheet. flatten into a cookie.

Bake at 350 degrees F for 20 minutes for a soft chewy cookie, cook longer for a crunchier cookie


This cookie is what I expected. It does not have the texture of a typical cookie. it is more of a dense cookie. There is no added sugar, so you get the sweetness from the bananas and the cranberries. I do think that these cookies are perfect for breakfast or a healthy snack. So do give these cookies a try.
