Basic Beef Stew

You will need:

- 2 lbs beef stew meat, cut into 1-inch cubes

- 1/4 cup all-purpose flour

- 1/2 teaspoon salt

- 1/2 teaspoon black pepper

- 3 tablespoons olive oil

- 4 cups beef broth

- 1 cup red wine (optional)

- 1 large onion, chopped

- 3 cloves garlic, minced

- 4 large carrots, sliced

- 4 large potatoes, cubed

- 2 stalks celery, sliced

- 2 tablespoons tomato paste

- 1 tablespoon Worcestershire sauce

- 2 teaspoons dried thyme

- 2 teaspoons dried rosemary

- 1 bay leaf

- 1 cup frozen peas (optional)

- Fresh parsley, chopped (for garnish)


Instructions:

1. **Prepare the Meat**: In a large bowl, mix the flour, salt, and pepper. Dredge the beef cubes in the flour mixture until well coated.

2. **Brown the Meat**: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef cubes in batches, browning them on all sides. Remove the beef and set aside.

3. **Cook the Vegetables**: In the same pot, add a bit more oil if needed and sauté the onions and garlic until softened and fragrant.

4. **Combine Ingredients**: Return the beef to the pot and add the beef broth, red wine (if using), tomato paste, Worcestershire sauce, thyme, rosemary, and bay leaf. Stir to combine.

6. **Add Vegetables**: Add the carrots, potatoes, and celery to the pot. Continue to cook for another 30-40 minutes, or until the vegetables are tender and the meat is falling apart.
