Easy Sausage and pepper Subs

Ingredients
2 Yellow bell peppers (cut into ½ “ strips)
1 Roasted red pepper (cut into ½” strips)
1 Lg, White onion (cut into ½ “ strips)
3 T. minced garlic
4 Italian sub rolls
4 Italian sausage links (bun length)
3 T. olive oil
2 T. tomato paste
¼ C. red wine vinegar
Salt and pepper to taste
Instructions
In a medium skillet cook and brown sausage links until done. Set aside. In a Dutch oven or large pot add oil, peppers, onions, and garlic. Sauté until onion is translucent. Add tomato paste and vinegar. Reduce and simmer 5 minutes salt and pepper to taste and add Sausage into pot. Cook an additional 5 minutes on low heat. Serve on sub roll.
