Ramen Salad

Ingredients (Dressing)

2 T soy sauce

½ cup vegetable oil

3 T. rice vinegar

1 T. sesame oil

1 T. lime juice

1 T. minced garlic

1 T. minced ginger

3 T. honey

2 T. water

2 T. sesame seeds

Ingredients (salad)

10 oz ramen noodles

Salt and pepper to taste

3 cups shredded or shaved vegetables. (pick 3, 1 cup each) squash, radishes, carrots, bell peppers, cucumbers, cabbage, or whatever else you like.

Instructions

Cook noodles according to package, drain and rinse with cold water, then set aside. Prepare veggies and set aside. In a mixing bowl, mix all ingredients for the dressing and whisk until blended. Refrigerate everything until it is time to serve. To serve dress noodles with ½ of the dressing and toss, place into serving bowls, and top with veggies 1/3 of bowl for each veggie. Drizzle remaining dressing over veggies.
