Spinach and Mushroom Lasagna

Ingredients
8 oz. fresh sliced mushrooms
2 jars Alfredo sauce
8 oz. frozen spinach (thawed and all liquid removed)
4 oz. ricotta cheese
16 oz. lasagna noodles
2 T. minced garlic
2 T. dried oregano
16 oz. shredded mozzarella cheese

Instructions
Preheat oven to 425 degrees. Cook noodles according to package directions. In a medium mixing bowl add 1 ¾ jar of alfredo sauce, garlic, oregano, and ricotta cheese, and mix well. Add spinach and mushrooms, and mix well.
To layer your lasagna, in a 9 x 9 casserole dish, coat your dish with pan spray, Then, add Remaining Alfredo sauce and cover the bottom of the dish. Then add ½ your cooked noodles, Then, add ½ of sauce mix, and then ½ mozzarella cheese. Repeat with 1 more layer. Bake for 30 minutes covered, then remove foil and cook an additional 15 minutes or until cheese is golden brown. Let rest for 10 minutes and serve hot.
