Introduction

Craving the flavors of an Italian sub sandwich but want a lighter, healthier option? This Italian Sub Salad is the perfect solution! Packed with fresh vegetables, protein-rich meats, and a tangy vinaigrette, it's a delicious and satisfying meal.

Ingredients

  • Small baguette loaf (diced into cubes)
  • 6 tablespoons olive oil, plus some for drizzling
  • 2 ounces shredded Provolone cheese
  • 1 cup pitted kalamata olives
  • ½ cup sliced roasted red pepper
  • 1 head iceberg lettuce (sliced thin)
  • 1 thinly sliced red onion
  • 1 pint cherry tomatoes (halved)
  • 10 ounces pearl mozzarella cheese (drained)
  • 1/3 cup grated Parmesan cheese
  • ¼ cup dried parsley
  • 7 ounces sliced deli ham (cut into strips), your choice of ham flavors
  • 4 ounces sliced salami (cut into strips)
  • 3 tablespoons red wine vinegar

Instructions

Croutons

  1. Preheat oven to 375 degrees.
  2. In a mixing bowl, combine bread cubes, 2 tablespoons olive oil, parsley, and Parmesan cheese. Toss to coat.
  3. Spread croutons on a baking sheet and bake until golden brown, about 10-12 minutes.

Dressing

  1. In a small bowl, whisk together red wine vinegar and 4 tablespoons olive oil until emulsified.

Assembly

  1. In a large bowl, combine lettuce, Provolone cheese, olives, roasted red pepper, red onion, cherry tomatoes, mozzarella pearls, ham, salami, and croutons.
  2. Drizzle with dressing and toss to coat.

  • For a heartier salad, add grilled chicken or shrimp.
  • Customize the salad with your favorite vegetables and toppings.
  • Make the salad ahead of time and store it in the refrigerator.
