Easy Lasagna pasta salad


 

Ingredients

2/3 C. roasted and coarsely cut almonds

1 lb. lasagna noodles broken into 2” pieces

1 T. minced garlic

2/3 C. olive oil

½ C. chopped fresh parsley

1/3 C. chopped basil

¼ C. lemon juice 

¼ C. red wine vinegar

2 T. pure maple syrup

2 T. Roasted red pepper strips

1 head of romaine lettuce (shredded)

2 C. chopped black olives

 

Instructions

In a medium saucepan cook lasagna according to package direction until done. Drain noodles and rinse in cold water to stop the cooking process. Set it aside. In a medium mixing bowl add almonds, garlic, oil, parsley, basil, lemon juice, vinegar, syrup, pepper strips, and olives. Stir to combine. Set it aside. In a large mixing bowl place lettuce, noodles, and sauce together and toss to coat.
