Prosciutto w/ Peaches and Tomatoes

 I always try different types of salad. I have to admit that I did not enjoy the dressing. That is because I don't like Dijon mustard. 

I did enjoy the other components of the salads.



 

Ingredients for the dressing:

3 T. sherry vinegar

1 ½ t. Dijon mustard

½ C. olive oil

Ingredients for the salad:

2 lbs. cherry tomatoes (halved)

3 Large peaches (pitted and cut into small wedges)

3 C. arugula

4 oz. Prosciutto (cut into bite size pieces)

3 Manchego Cheese (shredded or shaved)

¼ C smoked salted almonds (chopped)

Salt and pepper to taste

 

Instructions for the dressing:

Whisk vinegar and mustard together until combined. Slowly pour in the oil and whisk until emulsified.

Instructions for the salad:

Arrange peaches and tomatoes on a serving plate, top with arugula, ham, cheese, and almonds. Serve family style with dressing on the side.
