Vegan Oatmeal Bars

Even though I can say that there are no animal products in this cookie (The chocolate chips might not be vegan), it is not low in sugar. If you want the bars lower in sugar, you would have to try a sugar substitute for the brown sugar. 


I baked these bars in my air fryer on the baking setting.

 

I used the following ingredients in the bars:

1/2 c. coconut oil

1/2 c. shortening

1 c. brown sugar

1/4 c. flax seed mixed with 1/4 cup water

1 1/2 c. oatmeal

3/4 c. flour

1/2 t. baking soda

1/2 t salt

1/2 t vanilla

1/2 c. chocolate chips

Mix the coconut oil, shortening, and brown sugar. Add the remaining ingredients.

I baked these in my baking tray that came with the air fryer. You can bake these in a small baking pan at 350 degrees (F) for about 15-20 minutes until done.

Enjoy this sweat treat with some healthy stuff in it!
