Tasty Eats - COVID Edition

That nasty COVID had finally hit our home. I guess it was just a matter of time.  I am counting my blessings that our household can recover at home and not in a hospital and that we (or at least I) can still prepare a meal. Granted, we did resort to having food delivered to our home a few days.

This is a chicken and spinach dish. I had made this dish a few days before I got sick.  The story is that I was picking the quick philly steak for a dish that my son wanted to make. I saw the quick chicken verson, so I used that in my dish instead. I believe this is the second time I made this dish, and this is a solid favorite. You can find the recipe for this here.



First my husband got sick, and few days later my son and I got sick. A few days after that my stepson got sick. But before he got sick, he had made the rest of us some chicken noodle soup. What made this soup special is that it is infused with garlic and honey.

This next dish is a simple crock pot recipe, 2 pounds of stew meat, 1 can of cream of mushroom soup, 1 can of cream of mushroom soup with garlic, 1 envelope of onion soup mix, 1 chopped green pepper, and some chopped roasted red pepper from the jar.  Cook on low for about 7-8 hours. I forgot to get the initial photo. We had severed the stew over rice. I had combined the left-over stew with the left-over rice, this is my lunch the next day.


For our final dish we some quick cinnamon rolls. This is just a biscuit dough and not a yeast one. I had an idea to add a little instant coffee to the frosting. It was tasty. 


Nice cream has been my comfort dish throughout the whole process. I will either have it for breakfast of lunch.  If you don't know what nice cream is, it is the vegan version of ice cream. My version always has frozen bananas and peanut butter. I sometimes add cocoa powder and flax seed.



At the time of this blog post, we are still dealing with COVID.  Future dinner plans include Philly Cheese steak, which got put off because my son did not feel well enough to make it. I had also planned of making Salsbury steak, that got put off because I wasn't feel well and pizza sounded good.

  4. Wishing you a quick and complete recovery. My husband was at high risk and refused to be vaccinated. I was vaccinated and boosted. He got it and gave it to me. He died one month ago today, and I'm back to normal. If only....
