BBQ Street Tacos

Here is another post in the BBQ Series


A different take on tacos.  We are just going to get into the recipes.

2 cups BBQ pulled beef (I used left over rib meat see recipe below for BBQ sauce) 

1 can black beans (drained and heated) 

2 cups coleslaw ((see recipe below) 

1 cup shredded Colby cheese 

12 flour tortillas (heated) 

In sauce pan mix pulled beef and coat with BBQ sauce heat till hot. In another sauce pan, heat black beans in juice. Place pulled beef, drained beans, coleslaw, cheese, and tortillas in separate serving dishes. Make your own taco! Serve with sour cream and salsa  


We also made coleslaw to go into the tacos. It mad a nice addition to the BBQ taco.


 

Cole Slaw 

1/4 head shredded cabbage 

3 carrots (shredded) 

¼ cup mayo 

1 T. white vinegar 

1 T. lemon juice 

2 T. celery seed 

Salt and pepper to taste 

Mix cabbage and carrots, set aside. In mixing bowl combine rest of ingredients and coat cabbage mix. Chill till ready to serve.
