Instructions

    In a high-sided skillet, heat oil on medium-high heat.
    Add sausage and cook on both sides until brown (about 4 minutes per side).
    Remove and cut into bite-size pieces.
    Add it back to the skillet and add all ingredients except for bread and butter and spinach.
    Simmer for 10-15 minutes.
    Add spinach with about 2 minutes left of cooking time.
