Applesauce Cookies

I had come across this recipe in my vintage Betty Crocker Cookie Book. I knew I had to make them. It has all the ingredients my husband likes.  This cookie did turn out to be a hit, my husband loves it. The applesauce gives the cookie a soft cake-like texture. The raisins and spices make this cookie taste like my Raisin Spice Cookies.




Here is the recipe for these cookies.


1/2 cup butter

1/2 cup shortening

2 cups brown sugar

2 eggs

2 Cups of well-drained applesauce - very important!








1/2 cup cold coffee

3 1/2 cups flour

1 teaspoon baking soda

1 teaspoon salt

1 teaspoon cinnamon

1 teaspoon nutmeg

1 teaspoon cloves

1 cup raisins

1/2 cup chopped nuts

Mix butter, shortening, sugar, and eggs, Stir in applesauce and coffee, Add in remaining ingredients, and chill for at least 2 hours. Heat oven to 400 degrees F,  Drop by tablespoonfuls about 2 inches apart on a lightly greased cookie sheet. Bake 9-12 minutes until it is done.
