Ingredients

2 T. olive oil

1 red onion (thinly sliced)

9 eggs

½ C. sour cream

¼ C. diced roasted red peppers

3 T. diced banana peppers

4 thinly sliced potatoes (your choice of potato)

2 T. butter 

2 T. dried chives (for garnish)

Salt and pepper to taste

 

Instructions

Preheat the oven to 400 degrees. In a large oven-proof skillet over medium heat, add the oil and onion. Cook until the onion is soft and translucent. 

Meanwhile, in a mixing bowl, add eggs, sour cream, salt, and pepper to taste. Add potatoes to coat. Then add the onion to the mixture and stir to combine. Add butter to the skillet, add the mixture back to the skillet, and cook covered for 30 minutes, then uncovered for an additional 10 minutes. Top with chives and serve family-style.
