Quick and Easy Greek Salad

By David Huston

Ingredients:

  • 3 tablespoons olive oil
  • 3 tablespoons red wine vinegar
  • 2 teaspoons Dijon mustard
  • 1 tablespoon dried oregano
  • 1 cucumber, sliced and quartered
  • 1 bell pepper (choose your preferred sweetness), diced
  • 1 red onion, coarsely diced
  • 1 pint cherry tomatoes, halved
  • 2/3 cup Kalamata olives, pitted and halved
  • 6 ounces crumbled feta cheese
  • Salt and pepper to taste

Instructions:

  1. Prepare the Dressing: In a small mixing bowl, combine the olive oil, red wine vinegar, Dijon mustard, and dried oregano. Whisk until well blended. This tangy dressing will infuse the salad with flavor.
  2. Assemble the Salad: Place all the other ingredients (cucumber, bell pepper, red onion, cherry tomatoes, Kalamata olives, and crumbled feta cheese) into a large salad bowl.
  3. Toss the ingredients gently to mix them evenly. The vibrant colors and textures will make your salad visually appealing.
  4. Chill and Serve: Refrigerate the dressing and the salad until you’re ready to serve.
  5. Just before serving, pour the dressing over the salad and toss to coat. The combination of fresh vegetables, salty olives, and creamy feta cheese will delight your taste buds.
  6. Season to Taste: Add salt and pepper according to your preference. Remember that the feta cheese and olives already contribute some saltiness, so adjust accordingly.
  7. Enjoy! Serve the Quick and Easy Greek Salad as a light lunch, a side dish, or even as a main course with some crusty bread. It pairs wonderfully with grilled chicken, lamb, or fish.

Feel free to customize this salad by adding fresh herbs like mint or parsley, or even a squeeze of lemon juice for extra zing. Bon appétit! 🥗🇬🇷
