Spiced Ground Lamb Pitas

Recipe by David Huston

  • 4 Pita Breads
  • 3 tablespoons minced garlic
  • 2 sliced Banana peppers
  • 1 teaspoon Coriander
  • 1 teaspoon cumin
  • ¼ teaspoon baking soda
  • 1 small diced onion (I recommend using red onion for sweetness and color)
  • 2/3 cup fresh parsley (coarsely chopped)
  • 1 tablespoon Paprika
  • 1 pound Ground lamb
  • 4 ounces crumbled Feta
  • Salt and pepper to taste

  1. Preheat the oven to 425°F (220°C).
  2. Prepare the Pita Breads: Place the pita bread on a cookie sheet and stab air holes in the bread to prevent puffing up during baking.
  3. Mix the Ingredients: In a large mixing bowl, combine all the other ingredients except for the lamb and feta. Mix well.
  4. Add the Lamb: Incorporate the ground lamb into the mixture until well combined.
  5. Assemble the Pitas: Spread the lamb mixture evenly onto the pita bread. Sprinkle crumbled feta on top.
  6. Bake: Bake the assembled pitas for 15 minutes.
  7. Cool and Serve: Let the pitas cool for an additional 5 minutes before serving.
