Grilled Cheese and Tomato Soup

My son had made some comforting tomato soups and grilled cheese. From scratch. Most times he just buys us food, however he does occasionally cook.  Just like the name of this blog, my son did wing this recipe with a little help from the internet. 

The tomato soup has:
6 tomatoes (he used beef steak tomatoes)
2-4 cloves of garlic (he used a full head of garlic, so lots of garlic)
an onion
1- 2 T of fresh basil
2 quarts of chicken stock
Salt and Pepper to taste.

Cut the tomatoes in half and roast along with the garlic in a375 F oven for about 30 minutes.
In the meantime sauté onions in enough butter to cover the bottom of the pan and slowly cook them over low heat for also about 30 minutes.

So tomatoes, garlic, and onions are done about the same time. Put these ingredients in a blender along with the basil and blend until smooth. put back in a large enough pot to add 2 quarts of chicken stock. Simmer for about 2-3 hours. Salt and pepper to taste. 



 For the grilled cheese sandwich. My son used sourdough bread, shredded Gouda and smoked cheddar cheese and bacon, which he cooked in the oven with some black pepper.


This was a really tasty meal, I thought he over salted the soup. I hope he make it again in the future. 

I also need to encourage him to cook more and not always buy restaurant food.
