Anzac Biscuits (Cookies)

 If you are from Australia or New Zealand, then you know what these are.


I have never heard of these before. It had oats and coconut in them so I knew I had to make these cookies, even though there are referred to as biscuits.

The things I found it interesting are that the butter is melted, the baking soda is dissolved in boiling water along with some golden syrup, and that there are no eggs in these. So this cookie has a potential to be vegan. Just find a butter replacement.

How I made these:

Heat oven to 300 F.
Combine:
1 cup of oats
1 cup coconut (I used unsweetened)
1 cup flour
1 cup sugar

Melt 1/4 pound (1 stick) butter
Add to the dry ingredients 

in a 1/4 cup boiling water add 1 tablespoon golden syrup (I used dark corn syrup) and 1 teaspoon baking soda. Add to the other ingredients.

I added a teaspoon of salt and a teaspoon of vanilla, but these items I believe are not traditionally found in this recipe. I almost added chocolate chips, but decided against it.

I ended up baking the cookies for about 10 minutes. It is going to depend if you like them crunchy or soft. They did turn out thin. I thought these cookies were tasty. It has a buttery coconut flavor, who knows how it would of turned out if I added the chocolate chips.
