Banana Date Nut Bars




 I wanted to make a vegan version of my favorite banana bar recipe that is in the vintage Betty Crocker Cookie Book. The bar does have a subtle banana flavor that I always loved.




I made these bars vegan, but you can also use sugar and eggs. I also used all whole wheat flour, you can use all purpose flour.

To make these I used:
1 cup mashed banana (2-3 bananas)
1/4 cup shortening (you could use butter)
1 cup sugar or sugar substitute
2 flax seed eggs (2 T ground flax seed, 1/4 cup water, set for 15 minutes) or 2 eggs
1 teaspoon vanilla
2 cups whole wheat flour or all purpose flour
2 teaspoon baking powder
1/4 teaspoon salt
1 cup chopped dates
1 cup chopped nuts

Combine banana, shortening, sugar, flax seed egg, and vanilla. Add flour, baking powder, and salt. Fold in dates and nuts. Spread in greased jelly roll pan. Bake 350 degrees for 20-25 minutes until done.
