Birthday Cake Bars

 I mentioned in my last blog post that I was going to make Birthday Cake Bars with my grandson. Here is the result:

I made the vanilla frosting by combining 1 1/2 tablespoons of soft butter, 1 1/2 cups of powdered sugar, 1 teaspoon vanilla and just enough milk to get it to the frosting consistency, about 1-2 tablespoons. Of course he wanted blue frosting, so I added blue food coloring.


Here is the cake before it was frosted. My grandson is 7 and enjoyed to process of making these bars to include reading the recipe for these bars. There are still going to be more bars coming. He wants to make the M&M version next.

Ingredients

    For the blondies:
        1 cup (2 sticks) unsalted butter, melted
        1 cup granulated sugar
        1/2 cup packed light brown sugar
        2 large eggs
        1 teaspoon vanilla extract
        1 cup all-purpose flour
        1/2 teaspoon baking powder
        1/4 teaspoon salt
        1/2 cup semisweet chocolate chips
        1/4 cup rainbow sprinkles

    For the frosting:
        1/2 cup (1 stick) unsalted butter, softened
        2 cups powdered sugar
        1/4 cup milk
        1 teaspoon vanilla extract

Instructions

    Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
    Make the blondies: In a large bowl, whisk together the melted butter, granulated sugar, brown sugar, eggs, and vanilla extract until combined.
    In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.   

Fold in the chocolate chips and rainbow sprinkles.
Pour the batter into the prepared baking pan and spread evenly.
Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Let the blondies cool completely before frosting.  

    Make the frosting: In a large bowl, cream together the butter and powdered sugar until light and fluffy.
    Gradually add the milk and vanilla extract, mixing until smooth.
    Frost the cooled blondies with the frosting and sprinkle with additional rainbow sprinkles, if desired.
    Cut into squares and enjoy!

Tips

    For a more intense chocolate flavor, use dark chocolate chips instead of semisweet chocolate chips.
    If you don't have rainbow sprinkles, you can use other types of sprinkles or chopped nuts.
    Store the blondies in an airtight container at room temperature for up to 3 days.

Additional Notes

    These blondies are best served fresh, but they can also be stored in an airtight container at room temperature for up to 3 days.
    For a more decadent treat, add a layer of chocolate ganache or caramel sauce to the blondies before frosting.
    Get creative with your frosting flavors! Try adding a teaspoon of peppermint extract for a festive twist or a tablespoon of cocoa powder for a chocolatey frosting.
