Beef Enchiladas

We are making these as part of a fundraiser for our church. This is a tasty and basic beef enchilada recipe.

BEEF Enchiladas
1/2 lb. ground beef
1 lb shredded Colby cheese
1/4 cup salsa (your choice of heat)
12 corn tortillas
1 large can enchilada sauce your choice of heat)
1 tablespoon Chili powder
1/2 teaspoon onion powder
1/2 teaspoon crushed red pepper
1/2 teaspoon Oregano
1/2 teaspoon paprika
1 teaspoon cumin
1/2 teaspoon sea salt
1/2 teaspoon pepper

Brown and drain ground beef. In separate bowls; 1st bowl mix 3/4 lb cheese with the salsa, in 2nd bowl mix all spices together. Add spices to ground beef and mix well. In a shallow pan pour small amount of enchilada sauce to cover bottom and fill 1/8 in high. Dip corn tortilla into shallow pan coating tortilla completely, in center of tortilla place table spoon of ground beef and 3 table spoons of cheese mix. Roll tortilla and place in "Pam" sprayed 2 qt. casserole dish. repeat until casserole dish if full. cover enchiladas with remaining enchilada sauce and top with remaining cheese. Cover and bake at 350 degrees for 30 minutes. Serve hot.

  2. I love making beef enchiladas, I use a can of Beef gravy with the enchilada sauce. I like the spices you add, will have to try them.
