I am sharing my husbands Stuffed Green Pepper recipe:
Stuffed Green Peppers

6 Large green peppers
1 lb Ground beef
1 onion finely diced
6 oz mushrooms (sliced)
1 8oz. Can Diced Tomatoes
1 10oz can Tomato soup
1 Cup Brown Rice
2 T. Oregano
2T. Garlic powder
2 C. Shredded Cheddar Cheese
1 C. Parmesan Cheese (grated)
Salt and pepper to taste
Preheat oven to 375. Cut tops off of green peppers, save tops but throw away stems and hollow out seeds. Finely dice green pepper tops, Brown ground beef, add onion and peppers until soft, add mushrooms, tomatoes, spices, and tomato soup, reduce heat and simmer 10 minutes. In separate pot add 2 cups water and cook rice until done. Add rice to meat mixture and mix well. Add ½ of Cheddar cheese to mixture, then stuff hollowed out peppers with the mixture. Top peppers with remaining cheese and parmesan. Bake for 30-40 minutes. Serves 6.
I love stuffed peppers, but I never make them. I need to make these for my family so I cane enjoy them again.
