Ingredients
- Small baguette loaf (diced into cubes)
- 6 tablespoons olive oil, plus some for drizzling
- 2 ounces shredded Provolone cheese
- 1 cup pitted kalamata olives
- ½ cup sliced roasted red pepper
- 1 head iceberg lettuce (sliced thin)
- 1 thinly sliced red onion
- 1 pint cherry tomatoes (halved)
- 10 ounces pearl mozzarella cheese (drained)
- 1/3 cup grated Parmesan cheese
- ¼ cup dried parsley
- 7 ounces sliced deli ham (cut into strips), your choice of ham flavors
- 4 ounces sliced salami (cut into strips)
- 3 tablespoons red wine vinegar
Instructions
Croutons
- Preheat oven to 375 degrees.
- In a mixing bowl, combine bread cubes, 2 tablespoons olive oil, parsley, and Parmesan cheese. Toss to coat.
- Spread croutons on a baking sheet and bake until golden brown, about 10-12 minutes.
Dressing
- In a small bowl, whisk together red wine vinegar and 4 tablespoons olive oil until emulsified.
Assembly
- In a large bowl, combine lettuce, Provolone cheese, olives, roasted red pepper, red onion, cherry tomatoes, mozzarella pearls, ham, salami, and croutons.
- Drizzle with dressing and toss to coat.
