Peaches w/ Blackened Chicken

 Here is the recipe for Peaches with Blackened Chicken:

 


Ingredients

2 T. old bay seasoning

2 T. cocoa powder

4 skinless, boneless chicken thighs

6 T. olive oil (divided in half)

3 T. lime juice

2 T. minced garlic

1 bunch diced green onions

6 peaches (cored and peeled) cut into wedges

½ C. Mint leaves

Salt and pepper to taste

 

Instructions

In a medium mixing bowl, mix old bay and cocoa together. Add chicken and toss to coat. In a large skillet heat 3 T. oil on medium to high heat. Add chicken and cook until done (internal temp. of 165 degrees. About 6-7 minutes each side). While chicken is cooking, in a large mixing bowl combine garlic, lime juice, remaining oil, salt, and pepper and mix until combined. Add peaches, onions, and mint to mixture, stir to coat. Place peach mixture on serving plate and place cooked chicken on top of peaches. Drizzle any remaining juice from peach mixture over top of chicken. Serve family style.
