My husband loves to create (and eat!) Mexican food, he created this new and easy recipe for you to try. These flautas are so delicious and easy to make, and they're perfect for a weeknight meal or a party appetizer.

Ingredients:

    4 boneless chicken thighs
    Small package of Corn Tortillas
    ½ cup Picante Sauce (your choice of heat)
    2 diced Jalapenos (optional)
    Sour cream
    2 cups Vegetable oil (I prefer canola oil)

Instructions:

    Cook chicken thighs until done. Let cool and shred chicken.
    In a mixing bowl, place chicken, picante sauce, and jalapenos. Mix well.
    Place corn tortillas in a wet paper towel and microwave for 30 seconds (this will soften the tortillas).
    Place 2 Tablespoons of the mixture in the center of the tortilla and roll it tight. Secure with a toothpick.
    Heat oil in a medium-deep pan and heat to 375 degrees.
    Place flauta in oil until the tortilla is crisp. Remove and place on a paper towel to drain.
    Serve with picante sauce, sour cream, and guacamole (optional).

Tips:

    If you don't have any corn tortillas, you can use flour tortillas.
    If you don't like spicy food, you can omit the jalapenos or use a mild picante sauce.
    These flautas are best served fresh, but they can also be reheated in the oven.
