Shrimp and Green bean Stir-Fry.
Ingredients
2 T. diced roasted Red Peppers
2 T. diced Banana Peppers
¼ cup Vegetable oil
3 T. minced garlic
1 diced Yellow Onion
Salt and Pepper to taste
2 T. Chili Powder
1 t. Coriander
1 t. Turmeric
1 t. Cummin
½ bunch cilantro
1 lb. green beans (fresh) or 2 cans, drained cut green beans
1 lb. 20/30 count shrimp (tail off and deveined)
1 ½ cup white rice (I prefer fried rice)
Instructions
In a large skillet add 3t. oil, onions, and garlic, and cook over medium heat for 5 minutes till onions are soft. Add 1/3 cup cold water cover the pan and cook for an additional 5 minutes (stir at least twice during the process). Add all spices and salt and pepper to taste. Cook 1 minute stirring constantly. Add 1/3 cup cold water and add green beans. Cook covered on medium-low heat until beans are done (it will take longer for fresh beans)about 6-8 minutes for fresh. Add in shrimp and cook an additional 8 minutes. Retaste for salt and pepper. Serve over rice and garnish with cilantro.
