Saw this You Tube Video, I knew I had to make it.
It did turn out very tasty and it is healthier than the traditional pancake. I would make this again, but it might not be practical to feed a family. This recipe is for one pancake. Yes, one large pancake. I quadrupled the recipe because I was also making it for my son. 2 eggs goes into a single serving, I need 8 eggs. I made flax seed eggs for half of this so I only need 4 eggs. I did that by using 1/4 cup ground flax seed with 3/4 cup of water. Let it sit for 15 minutes.
I made 3 pancakes, one for me and two for my son, and I made mini pancakes with the rest of the batter for my breakfast throughout the week. I plan on sandwiching some peanut butter and mini chocolate chips.
