This is a creative and simple dish, but I had a confession to make. I ate my dish with ketchup. I can't help it, I am a ketchup junkie. I picked out the potatoes and bratwurst and dipped it in ketchup.
It is, however, delicious on its own.

Bratwurst Hash

2 bratwurst (sliced)
1 onion (diced)
3 Russet potatoes (cubed)
2 tablespoons olive oil
3 tablespoons Italian seasoning
4 oz. shredded cheddar cheese
Salt and pepper to taste
In a skillet heat oil and sweat the onions, add potatoes and bratwurst. Stir occasionally until potatoes are cooked. add seasoning and stir well, add cheese and mix well. Serve Hot
