Dave's easy apple pie
Crust:
2 cups flour
2/3 cup shortening
1/4 cup sugar
8 T water
Mix all ingredients well until dough forms small balls. Divide into 2 equal parts. Roll 1 part of the dough out and place in a 9" pie pan, removing excess dough from side of pan. Preheat oven to 425 degrees. Cover pie dough with aluminum foil and cook for 6 minutes. remove from oven.
Filling:
4 Red Washington apples (peeled and cut into 1/2 inch cubes)
1/3 cup sugar
1/2 cup brown sugar
3 T cinnamon
2 t corn starch
Mix all ingredients well and place inside partially baked pie shell.
Take rest of dough roll out and place on top of filling. Pinch edges around the crust and place 3 or 4 slits in the middle of top crust. reduce heat on oven to 375 degrees. Cover pie with aluminum foil and bake 20 minutes, remove foil and bake additional 25-30 minutes. Let cool.
